'Tis the season to be jolly, so celebrate in style with my take on a Cosmo. Traditionally you would use cranberry juice, but I've switched things up with fresh pomegranate juice, plus my spice-infused vodka makes for a very special cocktail. It's simply Christmas in a glass.

CHRISTMAS-INFUSED VODKA
½ a fresh red chilli
1 lime
1 clementine
1 lemon
1 cinnamon stick
3-4 cloves
a few pink peppercorns
1 sprig of fresh rosemary
700 ml quality vodka
CHRISTMAS COSMOPOLITAN
½ a pomegranate
40 ml Christmas-infused vodka or quality vodka
10 ml triple sec
15 ml lime juice, optional
1 orange, optional, to serve

Steps:

  • Start by making the Christmas-infused vodka: deseed the chilli, then use a speed-peeler to cut three strips of peel each from the lime, clementine and lemon (9 pieces in total).
  • Place it all in a large, dry non-stick frying pan on a medium heat, with the cinnamon, cloves, peppercorns and rosemary, then toast for a couple of minutes, or until fragrant. Remove the pan from the heat and allow to cool slightly.
  • Once cool enough to handle, poke all of the aromatics into the bottle of vodka (you could use a chopstick to push them down the bottle neck) and leave to infuse for at least three days.
  • To make a Christmas Cosmopolitan, fill a cocktail shaker or jug with ice. Squeeze in the pomegranate juice, through your fingers - you want about 25ml - then add the remaining ingredients (except the orange).
  • Shake or stir well, strain into your favourite martini glass and garnish with a strip of orange peel, if you like.

100 ml (1/3 cup + 1 tbsp) Vodka
60 ml (1/4 cup) Cointreau or Triple Sec (See Note 1)
250 ml (1 cup) cranberry juice (sweetened )
1 tbsp freshly squeezed lime juice (See Note 2)
1 cup ice cubes
garnish of your choice - eg: orange, lime, rosemary

Steps:

  • Put all the ingredients into a cocktail shaker or jar.
  • Shake well to thoroughly combine the ingredients and ensure they are chilled. Strain into a martini glass or another glass of your choice.
  • Serve with a garnish if you wish. I like orange peel, a twist of lime and sometimes a sprig of rosemary for a festive touch!

THE RIM
2 Tbsp granulated sugar
2 Tbsp salt, kosher variety, fine grind
1 lime wedge
THE DRINK
1 c cranberry juice
6 oz tequila
4 oz triple sec
3 Tbsp lime juice, freshly squeezed
ADDITIONAL ITEMS
ice, as needed
OPTIONAL ITEMS
whole cranberries, frozen
mint, for garnish

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients (mise en place).
  • 3. If you are using the cranberries, add them to the freezer about an hour before serving.
  • 4. Combine the salt and sugar in a small dish.
  • 5. Wet the rim of the glasses with the lime wedge, and then dip into the salt/sugar mixture.
  • 6. Combine the drink ingredients into a pitcher and stir to combine.
  • 7. PLATE/PRESENT
  • 8. You have two choices for serving. You can add the drink mixture to a blender with ice, and serve it up like a slushy, or you can add some ice cubes to a glass and then pour over the ice. If you are using them, garnish with some of the frozen cranberries and mint. Enjoy.
