Yield Makes 20 bars

Number Of Ingredients 8

1 cup old fashioned oats
1/2 cup raw pumpkin seeds (also known as pepitas)
1/2 cup raw sunflower seeds
2 tablespoons flax seeds
1 cup dried fruit (blueberries, raisins, currants, cranberries and/or cherries)
1/2 cup unsweetened coconut flakes
1/3 cup honey
1/2 cup sunflower butter

Steps:

  • Preheat oven to 325 degrees.
  • In a food processor, pulse the first 6 ingredients until finely chopped (it's ok if there are few coarsely chopped pieces).
  • Add the honey and sunflower and pulse until starting to combine.
  • Pour the mixture into a 9 x 9 inch pan, greased then line with parchment and press down into the pan until completely even.
  • Bake for 25 minutes.
  • Let the bars completely cool before cutting with a serrated knife into bars.
  • Serve.

Tips:

  • For a chewier texture, use a food processor to finely chop the nuts and cranberries.
  • If you don't have a food processor, you can chop the nuts and cranberries by hand with a sharp knife.
  • Be sure to measure the honey accurately, as too much honey will make the bars too sweet.
  • If you want a more tart bar, you can use dried cherries or blueberries instead of cranberries.
  • Feel free to add other mix-ins to the bars, such as chocolate chips, peanut butter chips, or shredded coconut.

Conclusion:

These dried cranberry fruit and nut bars are a delicious and healthy snack that can be made in just a few minutes. They're perfect for on-the-go breakfasts, lunches, or snacks. The bars are also a great way to use up leftover cranberries and nuts. So next time you're looking for a quick and easy snack, give these dried cranberry fruit and nut bars a try!
