- 1. Cook pasta according to pasta directions.
- 2. Before draining pasta set aside a cup of the salted pasta water just in case.
- 3. For chicken... Sprinkle both sides of chicken with salt and pepper
- 4. Melt half the butter in a large skillet over high heat
- 5. Add chicken and cook for two minutes on each side until deep golden brown.
- 6. Remove chicken on the plate rest for a few minutes and then shred.
- 7. For the sauce... Turn down the heat to medium high. In the same skillet add remaining butter and garlic.
- 8. Cook garlic slowly for 30 seconds until golden, then add the wine.
- 9. Stir garlic and wine, simmer. Once mostly evaporated, add chicken broth, cream, Parmesan cheese and sun-dried tomatoes.
- 10. Simmer on medium for 3 to 5 minute stirring until it reduces and thickens. Add basil
- 11. Add spinach, chicken, and pasta. Toss pasta until the sauce thickens and coats pasta well. Use pasta water to thin sauce if needed. A little at a time.
