HERB CRUSTED FRESH HAM

Categories     main-dish

Time 3h50m

Yield 6 to 8 servings

Number Of Ingredients 7

1 tablespoon freshly chopped thyme leaves
1 teaspoon freshly chopped rosemary leaves
1 teaspoon freshly chopped tarragon leaves
1/2 teaspoon dried untreated lavender flowers
1 (6 to 8-pound) bone-in ham (preferably shank end, with skin)
Coarse salt and freshly ground black pepper
2 cups chicken stock

Steps:

  • In a small bowl, combine the thyme, rosemary, tarragon, and lavender. Season the ham with salt and pepper. Rub the herb mixture all over the ham and set aside to marinate and come to room temperature, 30 minutes.
  • Preheat oven to 350 degrees F.
  • Place the herb-crusted ham in a roasting pan. Bake approximately 25 minutes per pound, or until the internal temperature reaches 150 degrees F. on an instant-read thermometer inserted near the bone.
  • Remove from the oven to a rack. Tent the ham loosely with aluminum foil and let stand until the center of the ham registers 160 to 165 degrees F. on the instant-read thermometer, 25 to 30 minutes. Remove ham from roasting pan. Transfer the drippings into a small saucepan to make the jus. Add the chicken stock, dash of salt, and pepper and bring to a boil over high heat. Decrease the heat to medium to keep warm until serving. Taste and adjust seasoning with salt and pepper.
  • Once the ham has rested, transfer to a cutting board, carve, and serve with the jus on the side.

Yield 10 servings

Number Of Ingredients 5

1 (10-pound) smoked ham with rind, preferably shank end
1 cup unsweetened apple juice or apple cider
1/2 cup whole grain Dijon mustard
2/3 cup (packed) golden brown sugar
1/4 cup honey

Steps:

  • Preheat oven to 325°F. Place ham in large roasting pan. Pour apple juice over ham. Cover ham completely with parchment paper, then cover ham and roasting pan completely with heavy-duty foil, sealing tightly at edges of pan. Bake ham until instant-read thermometer inserted into center of ham registers 145°F, about 3 hours 45 minutes. Remove ham from oven. Increase oven temperature to 375°F.
  • Remove foil and parchment from ham. Drain and discard liquids from roasting pan. Cut off rind and all but 1/4-inch-thick layer of fat from ham and discard. Using long sharp knife, score fat in 1-inch-wide, 1/4-inch-deep diamond pattern. Spread mustard evenly over fat layer on ham. Pat brown sugar over mustard coating, pressing firmly to adhere. Drizzle honey evenly over. Bake until ham is well glazed, spooning any mustard and sugar glaze that slides into roasting pan back over ham, about 30 minutes. Transfer ham to serving platter; let cool at least 45 minutes. Slice ham and serve slightly warm or at room temperature.

BAKED HAM WITH MUSTARD AND MARJORAM

Yield Makes 8 servings

Number Of Ingredients 10

1 1/2 cups whole-grain Dijon mustard
1/2 cup (packed) golden brown sugar
3 tablespoons dried marjoram
2 tablespoons minced garlic
2 tablespoons frozen orange juice concentrate, thawed
1 teaspoon ground black pepper
1 9- to 10-pound fully cooked bone-in ham (shank or butt end)
2 1/2 cups Madeira
1 cup orange juice
2 tablespoons chopped fresh marjoram or 2 teaspoons dried

Steps:

  • Preheat oven to 400°F. Mix first 6 ingredients in medium bowl. (Can be prepared 1 day ahead. Cover and refrigerate)
  • Line large roasting pan with double layer of foil. Trim any tough rind and fat from upper side of ham, leaving 1/4-inch-thick layer of fat. Using long sharp knife, score fat in 1-inch-wide diamond pattern. Place ham in prepared pan. Pour Madeira and 1 cup orange juice into bottom of pan. Bake ham until heated through, about 45 minutes.
  • Remove pan from oven. Increase oven temperature to 450°F. Spread mustard mixture generously over top and sides of ham. Return to oven and continue to bake until mustard coating is golden brown, about 35 minutes.
  • Transfer ham to platter. Skim fat from pan juices and discard. Pour pan juices into medium saucepan. Add marjoram and bring to boil. Season sauce to taste with salt and pepper. Slice ham into 1/2-inch-thick slices. Serve with sauce.

Tips:

  • Preheat your oven to the correct temperature. This is essential for ensuring that the ham cooks evenly throughout. If the oven is too hot, the outside of the ham will burn before the inside is cooked through. If the oven is too cool, the ham will take too long to cook and may not reach a safe internal temperature.
  • Use a meat thermometer to ensure that the ham is cooked to the proper temperature. The safe internal temperature for ham is 145 degrees Fahrenheit. Insert the meat thermometer into the thickest part of the ham, making sure not to touch the bone. If the ham is not yet cooked to the proper temperature, continue cooking it for a few more minutes and check again.
  • Baste the ham regularly during cooking. This will help to keep the ham moist and prevent it from drying out. You can use a simple mixture of water and vinegar, or you can use a more flavorful basting liquid, such as a mixture of honey, mustard, and herbs.
  • Let the ham rest before carving. This will allow the juices to redistribute throughout the ham, resulting in a more tender and flavorful meat.

Conclusion:

Double Mustard and Herb Crusted Ham is a delicious and easy-to-make dish that is perfect for any occasion. The combination of mustard, herbs, and bread crumbs creates a flavorful crust that perfectly complements the tender ham. This dish is sure to be a hit with your family and friends.
