This 'flourless' chocolate cake was all the rage in the 1980s. As I vaguely remember, the decade celebrated decadent overindulgence and this dessert is that and more. By modern standards, this cake is ridiculously rich. In fact, some of you may find it too intense, but most true chocolate fiends will be in heaven. Serve with ice-cold fresh raspberry sauce.

18 ounces semisweet chocolate, chopped
10 tablespoons unsalted butter
5 large eggs, at room temperature
4 teaspoons white sugar
4 teaspoons all-purpose flour
1 pinch cayenne pepper
1 pinch salt

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Butter and flour a 9-inch cake pan.
  • Melt semisweet chocolate and unsalted butter together in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula, until chocolate and butter are completely melted and combined. Remove from heat.
  • Beat eggs and sugar together in a bowl with a whisk or an electric mixer until pale and very thick, 5 to 10 minutes. Sift in flour, cayenne, and salt; whisk to combine.
  • Pour 1/4 of the egg mixture into chocolate mixture; stir to combine. Pour chocolate mixture into remaining egg mixture and stir until cake batter is combined. Pour batter into prepared cake pan.
  • Bake in the preheated oven until just barely set, with a jiggle below the surface, 14 to 15 minutes. Cool to room temperature, wrap in aluminum foil, and refrigerate until chilled, at least 1 hour.

1 cup hot coffee
2 cups sugar
1 2/3 cups all-purpose flour
1 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3 large eggs
1/4 cup oil
1 cup skim milk
1 teaspoon vanilla
2 cups semi-sweet chocolate chips
1 cup skim milk
2 tablespoons sugar
2 tablespoons light corn syrup
1/4 cup shortening

Steps:

  • Preheat oven to 300ºF.
  • Spray two 9 x 2-inch round cake pans with Crisco No Stick Cooking Spray. Line bottoms with rounds of wax paper or parchment paper; spray again.
  • Combine chocolate chips and hot coffee in a bowl. Let mixture stand, whisking occasionally, until chocolate is melted and mixture is smooth.
  • Whisk together sugar, flour, cocoa powder, baking soda, baking powder and salt in a large bowl.
  • Beat, in the bowl of an electric mixer, eggs until thick and yellow, about 3-5 minutes. Slowly add Oil, milk, vanilla and melted chocolate mixture to eggs, beating until combined well. Add dry ingredients and beat on medium speed until just combined well.
  • Divide batter between pans and bake in middle of oven until a toothpick inserted in center comes out clean, 45 minutes.
  • Cool layers in pans on racks for 30-45 minutes. Run a thin knife around edges of pans and invert layers onto racks. Carefully remove wax paper and cool layers completely.
  • Whisk together, in a 1-1/2- to 2-quart saucepan, the cream, sugar and corn syrup. Bring to a boil over medium heat, whisking until sugar is dissolved. Remove pan from heat and add chocolate chips, whisking until chocolate is melted and mixture is smooth.
  • Crisco into 3 pieces and add to frosting, whisking until smooth.
  • Transfer icing to a bowl and chill until spreadable, about 30 minutes.
  • Spread icing between cake layers and over top and sides.

1 c strong brewed coffee...hot
2 c sugar
1 2/3 c flour
1 c unsweetened cocoa powder
1 1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3 large eggs
1/2 c vegetable oil
1 c buttermilk
1 tsp vanilla
you will need no stick cooking spray and wax paper or parchment paper also.

Steps:

  • 1. HEAT oven to 300ºF. Spray two 9 x 2-inch round cake pans with no-stick cooking spray. Line bottoms with rounds of wax paper or parchment paper; spray again.
  • 2. COMBINE chocolate chips and hot coffee in medium bowl. Let mixture stand, whisking occasionally, until chocolate is melted and mixture is smooth. Whisk together sugar, flour, cocoa powder, baking soda, baking powder and salt in large bowl.
  • 3. BEAT eggs in bowl of electric mixer until thick and yellow, about 3 to 5 minutes. Slowly add oil, buttermilk, vanilla and melted chocolate mixture, beating until well combinedl. Add dry ingredients; beat on medium speed until just combined. Divide batter between prepared pans.
  • 4. BAKE 40-45 minutes in middle of oven or until a toothpick inserted in center comes out clean. Cool in pans on racks 30 to 45 minutes. Run a thin knife around edges of pans. Invert layers onto racks. Carefully remove wax paper. Cool completely. Use your favorite frosting or try the Glossy Chocolate frosting(as seen in the picture) that I have also posted.

1 teaspoon baking soda
1/2 cup sour cream
1 teaspoon baking powder
2 tablespoons unsalted butter

6 tablespoons heavy cream
1 cup sifted confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees. Butter and flour a 10-inch tube pan.
  • Cut the chocolate and butter into small pieces and place in a large bowl. Pour 1 cup boiling water over them; let stand until melted. Stir in the vanilla and sugar, then whisk in the egg yolks, one at a time.
  • In a small bowl, mix the baking soda and sour cream and whisk into the chocolate mixture. Sift the flour and baking powder and add to the batter, mixing thoroughly.
  • Beat the egg whites until stiff but not too dry. Stir a quarter of the egg whites thoroughly into the batter. Gently fold in the remaining whites.
  • Pour the batter into the prepared pan. Set on the center rack of the oven and bake until a cake tester inserted into the center comes out clean, 40 to 50 minutes. Cool in the pan for 10 minutes, unmold and cool completely before frosting.
  • To make the frosting: Place all the ingredients in a heavy saucepan over low heat and whisk until smooth. Spread on the cake while the frosting is still warm.

1 cup mayonnaise
1 cup water
1 cup sugar
1 teaspoon vanilla
1/2 cup cocoa
2 1/4 cups flour
1 pinch salt
1 1/2 teaspoons baking soda
1 1/4 cups sugar
1 cup heavy cream
5 unsweetened chocolate squares
1/4 lb unsalted butter, broken into pieces
1 teaspoon vanilla

Steps:

  • Cake: Mix mayonnaise, water, sugar and vanilla together until well blended.
  • Sift cocoa, flour salt and baking soda together.
  • Stir into liquid ingredients and mix just until blended.
  • Pour batter into 2 greased and floured sandwich cake tins[8-9 inch size].
  • Bake in a preheated 375 deg F oven for 20-25 minutes or until a toothpick inserted in the centre comes out clean.
  • Cool and then ice.
  • Icing: Bring sugar and cream to a boil.
  • Reduce heat and simmer for 5 minutes.
  • Stir occasinaly to stop cream from boiling over.
  • Remove from heat.
  • Finely chop or grate the chocolate.
  • Sir into the cream until completely melted.
  • Stir in butter and vanilla.
  • Once butter is melted, refrigerate icing until cold.
  • Once cold beat the icing with an electric mixer or a wooden spoon until thick and of a good spreading consistency.

Tips:

  • Use high-quality chocolate. This will make a big difference in the flavor of your cake. Look for chocolate with a cocoa content of at least 70%.
  • Don't overmix the batter. Overmixing can make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake at the right temperature. The ideal temperature for baking a chocolate cake is 350 degrees Fahrenheit.
