1 pound lean ground beef
1 medium onion, finely diced
salt and ground black pepper to taste
¼ cup water
1 ½ tablespoons taco seasoning mix
1 (15 ounce) can dark red kidney beans, drained
½ (12 ounce) bag nacho cheese-flavored corn chips (such as Doritos®), crushed
1 large head romaine lettuce, chopped
1 ½ medium tomatoes, diced
½ cup shredded Cheddar cheese, or more to taste
½ cup Catalina salad dressing, or to taste

Steps:

  • Heat a large nonstick skillet over medium to medium-high heat and saute ground beef, diced onion, salt, and pepper together until ground beef is browned and no longer pink and onions are tender, about 10 minutes. Add 1/4 cup water and taco seasoning to the meat. Stir to coat and allow to simmer for 1 minute to thicken. Set aside to cool while you prep the salad.
  • Add kidney beans, crushed chips, lettuce, tomatoes, Cheddar cheese, and dressing to a large bowl. Top with meat mixture and toss gently to evenly combine. Serve immediately.

1 lb ground beef
1 cup chopped lettuce (more or less to your liking, I love lettuce and always add more)
1 cup chopped tomato (more or less to your liking, I love tomatoes and always add more)
1 cup cheddar cheese (more or less to your liking, I love cheese and always add more)
1 finely chopped red onion
1 (1 1/4 ounce) package taco seasoning (I use El Paso, but any will do)
1 (15 ounce) can ranch style beans (you cant get these everywhere, so you can also use any brand of chilli beans)
1 (16 ounce) bottle Catalina dressing
1 (12 1/2 ounce) bag Doritos

Steps:

  • Fry ground beef and add taco seasoning.
  • Mix ground beef and ALL ingredients, except Doritos (unless you don't mind soggy), in a large bowl.
  • Refrigerate.
  • Mix in Doritos and enjoy!
  • Note: I enjoy this nice and cold from the fridge, but you may prefer it warm or room temperature.

2 -3 lbs ground beef
1/2 cup onion, chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
1 (15 ounce) can Bush's red beans
1 (8 ounce) bottle kraft french Catalina dressing
1/2 cup water (use dressing bottle)
2 tablespoons chili powder
lettuce, shredded
tomatoes, chopped
grated cheddar cheese
dorito's nacho chip

Steps:

  • In large skillet brown ground beef.
  • Drain and return to skillet.
  • Stir in onion and continue to cook 5 minutes.
  • Add seasonings, red beans, salad dressing and water.
  • (Note: Fill salad dressing bottle half way and shake well before adding to ground beef mixture.).
  • Stir to mix and allow to simmer over medium low heat 15 minutes.
  • Place Dorito's Chips on plate- crush slightly if desired.
  • Spoon meat& bean mixture over top and garnish with lettuce, tomatoes& cheese.
