Tips:

  • For a light and airy donut: Use a combination of cake flour and all-purpose flour. Cake flour will give the donuts a tender crumb, while all-purpose flour will provide structure.
  • Keep the dough cold: This will help the donuts rise properly and prevent them from becoming too dense.
  • Proof the dough in a warm place: This will help the yeast to activate and rise the dough.
  • Fry the donuts at the correct temperature: The oil should be between 350°F and 375°F. If the oil is too hot, the donuts will brown too quickly and be raw in the center. If the oil is too cool, the donuts will absorb too much oil and be greasy.
  • Drain the donuts on paper towels: This will help to remove excess oil.
  • Glaze the donuts while they are still warm: This will help the glaze to set and give the donuts a shiny finish.

Conclusion:

These pre-1940s recipes for sweet milk donuts provide a taste of history and a delicious treat. With a few simple ingredients and a little bit of time, you can make these classic donuts at home. Whether you prefer them plain, glazed, or sprinkled with sugar, these donuts are sure to satisfy your sweet tooth. So next time you're looking for a nostalgic snack, give one of these recipes a try.
