BBQ BAKED BEANS

BBQ Baked Beans image

BBQ baked beans are a summer staple. This shortcut version relies on ordinary canned baked beans, which we dress up with fresh peppers, onions, cider vinegar and barbecue sauce. The sweet and tangy side dish is perfect for a summer barbecue, picnic, potluck or weeknight dinner. The beans taste even better the next day, so they can be prepared ahead of time and reheated or served at room temperature.

Time 1h20m

Yield 6 servings

Number Of Ingredients 12

8 slices bacon (about 8 ounces), cut into 1/2-inch pieces
1 medium yellow onion, diced
1 green bell pepper, seeded and diced
Two 28-ounce cans baked beans
1 cup barbecue sauce
1/4 cup molasses
1/4 cup apple cider vinegar
1 tablespoon Worcestershire sauce
1/3 cup packed dark brown sugar
2 teaspoons yellow mustard powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat an oven-proof heavy-bottom pot or Dutch oven over medium heat. Add the bacon and cook, stirring often, until the fat has started to render and the bacon is beginning to crisp, about 5 minutes. Add the onions and bell pepper and continue to cook, stirring often, until the vegetables are slightly softened, about 3 minutes.
  • Stir in the canned beans, barbecue sauce, molasses, vinegar, Worcestershire, brown sugar, mustard powder, cayenne, 1 teaspoon salt and several grinds of black pepper. Bring to a simmer and let cook over low heat, stirring occasionally, until the sauce has thickened slightly, about 5 minutes.
  • Transfer the pot to the oven and bake (uncovered) until the sauce thickens and the beans on top begin to brown, about 40 minutes. Remove from the oven and let cool for at least 15 minutes before serving warm or at room temperature.

HEATHER'S BBQ BAKED BEANS

Heather's BBQ Baked Beans image

I've brought this variation of baked beans to many BBQ's, even has made an appearance at Easter dinner - its one of those recipes that people say 'oh would you bring those baked beans again please.' I always make them in the crock-pot, but have included instructions for oven too. Leftovers re-heat very well.

BOSTON BAKED BEANS

Boston Baked Beans image

A wonderful old-fashioned baked bean flavor. This recipe has served by family for 29 years and originally came from my mother-in-law. It tastes great served with fresh cornbread or biscuits and honey. Although you need to allow time for soaking and simmering the beans, this recipe is still quite easy.

Time 5h

Yield 6

Number Of Ingredients 10

2 cups navy beans
½ pound bacon
1 onion, finely diced
3 tablespoons molasses
2 teaspoons salt
¼ teaspoon ground black pepper
¼ teaspoon dry mustard
½ cup ketchup
1 tablespoon Worcestershire sauce
¼ cup brown sugar

Steps:

  • Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.
  • In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.
  • Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.

Tips:

  • Soak the beans overnight. This will help to reduce the cooking time and make the beans more tender.
  • Use a variety of beans. This will give the baked beans more flavor and texture. You can use any type of bean you like, but some good options include navy beans, pinto beans, black beans, and kidney beans.
  • Use a flavorful liquid. The liquid you use to cook the beans will add a lot of flavor to the final dish. You can use water, broth, or even beer. If you're using water, you can add some spices or herbs to give it more flavor.
  • Add some sweetness. Baked beans are traditionally sweet, so you'll want to add some sugar or honey to the pot. You can also use molasses or brown sugar for a more complex flavor.
  • Add some smokiness. Smoked paprika or liquid smoke will give the baked beans a smoky flavor that's reminiscent of barbecue. You can also add some bacon or ham hocks to the pot for even more smokiness.
  • Let the beans simmer for a long time. The longer the beans simmer, the more tender and flavorful they will be. Simmer the beans for at least 2 hours, or until they are very tender.

Conclusion:

Dinosaur BBQ-style baked beans are a delicious and easy-to-make side dish that's perfect for any occasion. They're also a great way to use up leftover beans. So next time you're looking for a flavorful and satisfying side dish, give these baked beans a try.
