ZUCCHINI AND TOMATO CASSEROLE

A light, yummer summer dish with zucchini, tomato, and Romano cheese. Depending on your tastes and dietary restrictions, you can play with this recipe a lot. One of my favorite ways is to sprinkle cheese on the zucchini before adding the tomatoes.

Tips:

  • Choose fresh, firm zucchini. Overripe zucchini will be watery and less flavorful.
  • Use a sharp knife to grate the zucchini. This will help prevent the zucchini from becoming mushy.
  • Squeeze out the excess liquid from the grated zucchini. This will help prevent the casserole from being too watery.
  • Don't overcook the casserole. The zucchini should be tender but still slightly crisp.
  • Serve the casserole warm or at room temperature. It can also be served cold, but the flavors will be best if it is served warm.

Conclusion:

Dilly zucchini casserole is a delicious and easy-to-make dish that is perfect for a summer potluck or picnic. It is also a great way to use up extra zucchini from your garden. With its creamy, cheesy sauce and crispy, buttery breadcrumb topping, this casserole is sure to be a hit with everyone who tries it. So next time you're looking for a new and exciting way to cook zucchini, give dilly zucchini casserole a try. You won't be disappointed!
