2/3 cup minced onion
2 pounds ground veal
3/4 cup fresh white breadcrumbs
2 large eggs, beaten to blend
2 1/4 cups whole milk
1 teaspoon salt
3/4 teaspoon ground black pepper
1/2 teaspoon ground nutmeg
2 tablespoons vegetable oil
1 pound baby carrots, peeled
1/4 cup all purpose flour
1 cup canned chicken broth
1 cup whipping cream
2 tablespoons Dijon mustard
3 tablespoons chopped fresh dill or 1 tablespoon dried dillweed

3 green onions, finely chopped
3 carrots, thinly sliced
1 lb potatoes, cut into chuncks or small round
4 tomatoes, grated
1 c water
1 bunch large, dill (about 1/4 lb) finely chopped (or 5-6 tablespoons of dried dill weed
2 lb frozen peas
salt & pepper to taste

Steps:

  • 1. In a saucepan, saute the green onions in the olive oil until transparent. Add the carrots & potatoes saute for a couple of minutes. Then add the peas & dill, saute for another 4-5 minutes. Finally add the tomatoes and water.
  • 2. Simmer, half covered for about 30 minutes or until peas are tender and most of the liquid has evaporated. At this point you should have a nice thick tomato sauce. Season with salt, pepper to taste.

2 garlic cloves, peeled, halved

2 lb carrots
1/2 stick butter
2 tsp dried dillweed
1/2 tsp salt
1/2 tsp pepper
1 tsp brown sugar (light or dark, your choice)

Steps:

  • 1. Wash, peel and thinly slice diagonally 2 pounds carrots.
  • 2. Place in pan and cover with water or steam until tender, about ten minutes.
  • 3. Meanwhile, in small pan, melt ½ stick butter.
