1 tablespoon pickle brine

1 small white onion, diced

2 cups water
½ cup dill pickle juice
1 sprig fresh dill, roughly chopped
¾ cup half-and-half
⅛ teaspoon celery salt
1 tablespoon all-purpose flour

Steps:

2 tablespoons mayonnaise
1 tablespoon onion juice
1 tablespoon grated onion
1 (1 pound) loaf white bread, crusts trimmed
1 (22 ounce) jar baby dill pickles

Steps:

  • In a medium bowl, mix cream cheese, mayonnaise, onion juice and grated onion.

Totally addictive appetizer! Dill pickle rounds are the center of attention when wrapped in a blanket of cream cheese spread deli meat. An interesting appetizer I wanted to try after chef EnJenn3 described it in Topic of the Month thread. I searched and was surprised that the recipe wasn't posted here. I found different versions of it on Allrecipes and Cooks.com. I took both versions and spliced them together, based on my previous experience making similar appys, and here you have it. Herb-flavored spreadable cream cheese could also be used instead of regular. I got about 5-6 pickle rounds out of each pickle, but it will depend on how big they are to begin with.

8 kosher dill pickles, whole
8 ounces cream cheese, softened
4 ounces sour cream (or you can use all cream cheese)
3 ounces meat (deli-sliced roast beef or ham, not ultra thinly sliced)
1 -2 tablespoon horseradish cream (optional, but really good with roast beef)

Steps:

  • Using paper towels, gently pat the pickles and the meat slices dry.
  • Combine the cream cheese, sour cream & horseradish (if using), together in a small bowl.
  • On a cutting board, or clean surface, lay out 1 slice of deli meat (if the meat is sliced thin enough to have holes, use two slices, one on top of the other) and gently spread with cheese mixture.

2 slices Texas toast
3 slices bologna
Pickle Dip, recipe follows
Handful of shredded iceberg lettuce
Handful of kettle chips
1 cup aged Havarti cheese, shredded
4 ounces cream cheese, softened
1/4 cup ranch dressing
2 tablespoons sriracha
1 tablespoon fresh chopped dill
1 tablespoon pickle brine (taste it and if it's very salty, reduce this amount)
2 whole kosher dill pickles, quartered and chopped

Steps:

  • Melt a nice layer of butter in a medium pan over medium heat. Toast the bread on each side until golden, smooshing it slightly so that it gets a good amount of butter. Transfer to a wire rack or tent them against each other to cool and get crisp. Add the bologna to the pan and cook on both sides until browned. Spread each slice of bread with a layer of Pickle Dip. Top one slice with lettuce and then the bologna and then the chips and then top with the other slice of bread.
