3 tablespoons Dijon mustard
1 tablespoon honey
6 slices (about 8 ounces) dill Havarti cheese from deli
24 medium or large cooked shrimp, thawed if frozen and tails removed
2 tablespoons finely chopped red bell pepper
2 tablespoons chopped fresh dill weed

Steps:

  • Heat oven to 400°. Place bread slices in jelly roll pan, 15 1/2x10 1/2x1 inch. Bake 4 to 6 minutes or until crisp.
  • Mix mustard and honey; spread over bread slices. Cut cheese into 2-inch squares. Top each bread slice with cheese, shrimp and bell pepper. Sprinkle with dill weed.

10 tablespoons olive oil
1 1/2 pounds large uncooked shrimp, peeled, deveined
3 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
2 tablespoons chopped fresh dill
2 large garlic cloves, minced
1 tablespoon grated lemon peel
1/4 cup drained capers
2 green onions, thinly sliced
1 head butter lettuce, leaves separated
1 lemon, cut into rounds (optional)
Fresh dill sprigs (optional)

Steps:

  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Sprinkle shrimp with salt and pepper; add shrimp to skillet and sauté until just opaque in center, about 3 minutes. Transfer to plate. Whisk next 5 ingredients in large bowl. Whisk in 8 tablespoons oil; season with salt and pepper. Mix in shrimp and accumulated juices, capers and green onions. Cool slightly, then cover and refrigerate at least 3 hours and up to 1 day.
  • Arrange butter lettuce leaves on 8 plates. Top with shrimp, dividing equally. Drizzle with more marinade, if desired. Garnish with lemon rounds and fresh dill sprigs, if desired.

4 large eggs
3/4 cup 2% low-fat milk
1/2 cup light cream
1 tablespoon fresh dill, chopped
1/4 teaspoon salt
1/8 teaspoon white pepper
125 g havarti cheese, grated
120 g crabmeat, well drained
5 ounces skinless salmon fillet, cut into small cubes
100 g shrimp
2 green onions, chopped
1/4 cup red bell pepper, finely chopped
1 (9 inch) deep dish pie shells

Steps:

  • Preheat oven to 350°.
  • In a bowl, whisk together eggs, milk, cream, dill, salt and pepper.
  • Cover the bottom of the pie shell with 1/2 of the cheese.
