SOUR CREAM & DILL SAUCE TO SERVE WITH SALMON

Sour Cream & Dill Sauce to Serve With Salmon image

I prefer to make this sauce ahead to give the flavors time to blend together. I've usually served this with salmon baked with a combination of white wine, tarragon, dill & shallots or scallions. I'm posting this the way it originally came to me, but nowadays I would omit the salt and let others add it at the dinner table.

3 tablespoons vegetable oil
4 large sirloin pork chops (each about 1/2 inch thick)
1/3 cup plus 1 tablespoon all purpose flour
1/2 cup chopped onion
2 teaspoons paprika
1 small garlic clove, crushed

CREAM CHEESE WRAPPED DILL PICKLES

Cream Cheese Wrapped Dill Pickles image

Totally addictive appetizer! Dill pickle rounds are the center of attention when wrapped in a blanket of cream cheese spread deli meat. An interesting appetizer I wanted to try after chef EnJenn3 described it in Topic of the Month thread. I searched and was surprised that the recipe wasn't posted here. I found different versions of it on Allrecipes and Cooks.com. I took both versions and spliced them together, based on my previous experience making similar appys, and here you have it. Herb-flavored spreadable cream cheese could also be used instead of regular. I got about 5-6 pickle rounds out of each pickle, but it will depend on how big they are to begin with.

Provided by Tinkerbell

Categories     Easy

Time 8h20m

Yield 40 appetizers

Number Of Ingredients 5

8 kosher dill pickles, whole
8 ounces cream cheese, softened
4 ounces sour cream (or you can use all cream cheese)
3 ounces meat (deli-sliced roast beef or ham, not ultra thinly sliced)
1 -2 tablespoon horseradish cream (optional, but really good with roast beef)

Steps:

  • Using paper towels, gently pat the pickles and the meat slices dry.
  • Combine the cream cheese, sour cream & horseradish (if using), together in a small bowl.
  • On a cutting board, or clean surface, lay out 1 slice of deli meat (if the meat is sliced thin enough to have holes, use two slices, one on top of the other) and gently spread with cheese mixture.
  • Lay one pickle along the edge of the meat and roll up tightly.
  • Repeat with remaining meat, cheese & pickles, then cover and refrigerate overnight.
  • Before serving, slice pickles into 1/2-3/4 inch rounds with a sharp knife.

OPENED-FACED OMELET WITH LEMON-DILL CREAM CHEESE, SMOKED SALMON AND GRILLED ASPARAGUS

Opened-Faced Omelet with Lemon-Dill Cream Cheese, Smoked Salmon and Grilled Asparagus image

Provided by Bobby Flay

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 11

8 ounces cream cheese, such as Philadelphia, at room temperature
1/4 cup finely chopped fresh dill
Finely grated zest of 1 lemon
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
12 thin spears fresh asparagus, trimmed
2 tablespoons canola oil, plus more to coat the pan
Kosher salt and freshly ground black pepper
12 large eggs
12 paper-thin slices nova smoked salmon
Fresh dill fronds, for garnish

Steps:

  • For the lemon-dill cream cheese: Mix together the cream cheese, dill and lemon zest and juice in a small bowl and season with salt and pepper. Cover and let sit at room temperature to allow the flavors to meld, at least 15 minutes.
  • For the omelets: Heat a grill pan over high heat. Brush the asparagus with 2 tablespoons oil and season with salt and pepper. Grill the asparagus on all sides until slightly charred and crisp-tender, about 5 minutes. Cut into thirds.
  • Heat a 6-inch nonstick pan over medium heat and brush with some oil. Whisk together 3 eggs in a small bowl until light and fluffy. Add to the pan and cook, stirring constantly with a heat-resistant rubber spatula, until barely cooked, about 20 seconds. Stir in some salt and pepper. Flip and cook until just set, but not dry, and barely golden brown on the bottom, 10 to 15 seconds more. Slide the omelet onto a plate. Spread some of the cream cheese over the omelet and top with some of the asparagus and 3 slices of the salmon. Garnish with some dill fronds. Transfer to a plate and repeat with the remaining ingredients.

Tips:

  • For the best flavor, use fresh dill. If you don't have fresh dill, you can use 1 tablespoon of dried dill.
  • You can use any type of sour cream, but full-fat sour cream will give you the creamiest result.
  • If you don't have lemon juice, you can use white wine vinegar or apple cider vinegar.
  • Dill cream can be used as a dip for vegetables, chips, or crackers. It can also be used as a topping for baked potatoes, grilled fish, or chicken.
  • Dill cream can be made ahead of time and stored in the refrigerator for up to 3 days.

Conclusion:

Dill cream is a versatile and delicious sauce that can be used in a variety of dishes. It is easy to make and can be tailored to your own taste. Whether you are using it as a dip, a topping, or a sauce, dill cream is sure to please everyone at your table.
