1 ½ pounds red potatoes
¾ pound fresh green beans, trimmed and snapped
¼ cup chopped fresh basil
1 small red onion, chopped
salt and pepper to taste
¼ cup balsamic vinegar
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
1 clove garlic, minced
1 dash Worcestershire sauce
½ cup extra virgin olive oil

Steps:

  • Place the potatoes in a large pot, and fill with about 1 inch of water. Bring to a boil, and cook for about 15 minutes, or until potatoes are tender. Throw in the green beans to steam after the first 10 minutes. Drain, cool, and cut potatoes into quarters. Transfer to a large bowl, and toss with fresh basil, red onion, salt and pepper. Set aside.

8 ounces green beans, trimmed cut into 1 1/2 inch pieces
3 lbs small red potatoes, unpeeled, halved
2 tablespoons dry vermouth
2 tablespoons white wine vinegar
1 large shallot, chopped
1 tablespoon coarse-grained Dijon mustard
2/3 cup extra virgin olive oil
2 tablespoons chopped fresh parsley

Steps:

  • Cook beans in large saucepan of boiling salted water until crisp tender, 4 minutes.
  • Drain.
  • Transfer to bowl of ice water.
  • Drain; pat dry with paper towels.
  • Cook potatoes in large pot of boiling salted water until just tender, about 12 minutes.
  • Drain; transfer to large bowl.
  • Sprinkle vermouth over hot potatoes; toss gently and let stand 5 minutes.

12 oz fresh green beans, trimmed, halved
3 Tbsp olive oil
1/2 tsp lemon zest
2 Tbsp lemon juice
1 Tbsp dijon mustard with horseradish
1 clove garlic, minced
1/2 tsp salt
1/4 tsp pepper
2 Tbsp chopped fresh parsley

Steps:
