Diane's Scotch-Irish Potato Salad image

This is my mother's recipe and is a combination of my two grandmothers' potato salad recipes. It leans a little to the Irish side. My mother's maiden name is McClain and her mother's maiden name is McBee. I like to make this the night before so the flavors will blend.

Tips:

  • Choose the right potatoes: Waxy or firm potatoes, such as Yukon Gold, New Potatoes, or Red Potatoes, hold their shape better in potato salad.
  • Cook the potatoes correctly: Boil the potatoes until they are just tender but not mushy. Overcooked potatoes will break apart easily and make the salad less appealing.
  • Let the potatoes cool completely: Before adding them to the salad, let the potatoes cool completely. This will help prevent the salad from becoming watery.
  • Use a light hand with the mayonnaise: Potato salad should be creamy, not gloppy. Add the mayonnaise in small amounts until you reach the desired consistency.
  • Add some crunch: Celery, onions, and hard-boiled eggs are classic potato salad additions that add crunch and flavor.
  • Don't be afraid to experiment: There are many variations on potato salad, so feel free to experiment with different ingredients and flavors. Some popular additions include bacon, cheese, dill, and mustard.

Conclusion:

Diane's Scotch-Irish Potato Salad is a classic recipe that is sure to please everyone at your next gathering. With its creamy dressing, tender potatoes, and flavorful add-ins, this salad is a delicious and satisfying side dish.
