4 cups fresh strawberries, hulled and halved, if large
1 1/4 cups granulated sugar
1 1/2 teaspoons grated orange zest
1 tablespoon cornstarch
1/2 cup freshly squeezed orange juice
1 cup all-purpose flour
1/2 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup quick-cooking (not instant) oatmeal, such as McCann's
12 tablespoons (1 1/2 sticks) cold unsalted butter, diced
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • For the fruit, toss the rhubarb, strawberries, 3/4 cup of the granulated sugar and the orange zest together in a large bowl. In a measuring cup, dissolve the cornstarch in the orange juice and then mix it into the fruit. Pour the mixture into an 8-by-11-inch baking dish and place it on a sheet pan lined with parchment paper.
  • For the topping, in the bowl of an electric mixer fitted with the paddle attachment, combine the flour, the remaining 1/2 cup granulated sugar, the brown sugar, salt and oatmeal. With the mixer on low speed, add the butter and mix until the dry ingredients are moist and the mixture is in crumbles. Sprinkle the topping over the fruit, covering it completely, and bake for 1 hour, until the fruit is bubbling and the topping is golden brown. Serve warm with ice cream.

LOW SUGAR STRAWBERRY RHUBARB CRUNCH

Low Sugar Strawberry Rhubarb Crunch image

A lot of rhubarb recipes add a large amount of sugar. This keeps the sweetener to a minimum so you can enjoy the tang of the rhubarb! Delicious-- enjoy! Use sugar in place of honey if you like.

I came across this recipe in a magazine, and with a few adjustments I was able to make it into a delicious crisp. It goes great with vanilla ice cream and one can also alter the recipe to make a mango raspberry crisp which is just as delightful! Optional: sprinkle the top with a handful of rolled oats and brown sugar.

RHUBARB CRISP

Rhubarb Crisp image

I found this strawberry rhubarb crisp recipe on a box of Quaker Oats about 20 years ago. It's quick and easier to make than pie. It's versatile, too, because you can add strawberries in spring or apples in fall. I usually pop it into the oven shortly before we sit down to eat so it's still warm for dessert! -C.E. Tips:

  • Use fresh strawberries and rhubarb. Fresh fruits have the best flavor and texture, and they'll make your crisp even more delicious.
  • Don't overcook the filling. The strawberries and rhubarb should be tender but still hold their shape. If you overcook them, they'll become mushy and the crisp will be less flavorful.
  • Use a variety of spices. Cinnamon, nutmeg, and ginger are all classic spices that pair well with strawberries and rhubarb. Feel free to experiment with other spices, such as cardamom, allspice, or cloves.
  • Make sure the topping is crispy. The topping is what gives the crisp its name, so make sure it's nice and crispy. You can do this by using a combination of oats, flour, butter, and brown sugar.
  • Serve the crisp warm with a scoop of ice cream or whipped cream. This is the best way to enjoy this classic dessert.

Conclusion:

Strawberry rhubarb crisp is a delicious and easy-to-make dessert that's perfect for any occasion. With its sweet and tangy filling and crispy topping, it's sure to be a hit with everyone who tries it. So next time you're looking for a tasty treat, give this recipe a try.
