Categories     Bar Cookie

Time 50m

Yield 24 2inch squares

Number Of Ingredients 8

1 3/4 cups all-purpose flour
2 cups oatmeal
1/2 teaspoon salt
3/4 cup Splenda sugar substitute
3/4 cup softened light margarine
500 g dates (suitable for baking)
1 1/4 cups hot water
1/2 cup Splenda sugar substitute

Steps:

  • Oven: 375 F (190 C).
  • FILLING: Mix dates, SPLENDA Granular and hot water and cook over medium heat until smooth and consistent.
  • BOTTOM AND TOP MIXTURE: Mix all dry ingredients.
  • Cut in softened margarine.
  • Spread half of mixture onto well greased 8 x 12 pan and press down evenly.
  • Add filling and spread evenly.
  • Add other half of mixture on top of filling.
  • Bake 375 F (190 C) for 25- 30 minutes.

Tips:

  • Prep your ingredients in advance: Before you start baking, measure and gather all your ingredients to ensure you have everything you need and the process goes smoothly.
  • Don't overmix the batter: Overmixing can result in a tough, dense texture. Mix just until the ingredients are well combined.
  • Don't substitute all-purpose flour for oat flour: Oat flour adds a unique flavor and texture to these squares. Substituting all-purpose flour will result in a different taste and texture.
  • Use ripe dates: Ripe dates are softer and sweeter, making them ideal for this recipe. If your dates are dry, soak them in warm water for a few minutes to soften them before using.
  • Don't overbake the squares: Overbaking can dry out the squares and make them less enjoyable. Bake just until a toothpick inserted into the center comes out clean.

Conclusion:

These diabetic-friendly date squares are a delicious and nutritious treat that can be enjoyed by people with diabetes and those looking for a healthier dessert option. The combination of oats, dates, and nuts provides a balanced blend of carbohydrates, fiber, and healthy fats, making them a satisfying and guilt-free snack. With their naturally sweet flavor and chewy texture, these squares are sure to become a favorite among those with a sweet tooth. Additionally, the recipe is easy to follow and can be adapted to suit different dietary needs, making it a versatile and inclusive dessert option.
