DEVILISH CHEESY HALIBUT

Devilish Cheesy Halibut image

This is an easy, different and delicious preparation for halibut. Halibut chunks are breadcrumbed and baked in a sauce of tomato, garlic, curry powder, soy sauce and lemon, then topped off with sharp cheddar cheese. I find that this needs no additional salt, and it's absolutely scrumptious!

1 1/2 cups grated sharp cheddar cheese
1 (15 ounce) can tomato sauce

Time 20m

Yield 4 servings

Number Of Ingredients 9

6 tablespoons olive oil
3 small garlic cloves, peeled and minced
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons lemon juice
4 6-ounce halibut fillets, skin removed
1 tablespoon light olive oil or vegetable oil
Chopped parsley, for garnish, optional

Steps:

  • In a large sealable plastic bag, combine the 6 tablespoons olive oil, garlic, basil, salt, pepper and lemon juice. Add fish, seal bag, and turn to coat. Refrigerate for at least 30 minutes or up to 2 hours.
  • In a large flat skillet (do not use a ridged pan), pour light olive oil or vegetable oil, tilting pan to spread evenly. Warm over high heat until smoking, then add fish fillets. Brush top and sides with marinade. Cook until seared, about 3 minutes; turn and sear other side, about 3 more minutes. Brush top and sides with marinade again. Reduce heat to medium. Cook until centers of fillets are just opaque, 2 to 4 minutes more on each side depending on thickness, brushing with marinade as before. Garnish with parsley, if desired, and serve.

Tips:

  • To ensure the halibut cooks evenly, use a baking dish that is just large enough to accommodate the fish fillets in a single layer.
  • For a crispy crust, pat the halibut fillets dry with paper towels before coating them in the breadcrumb mixture.
  • Use freshly grated Parmesan cheese for the best flavor. Pre-grated cheese can be bland and lacking in flavor.
  • If you don't have a food processor, you can crush the crackers into fine crumbs using a rolling pin or a mallet.
  • Serve the halibut immediately with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.

Conclusion:

This devilish cheesy halibut recipe is a quick and easy weeknight meal that is sure to please the whole family. The halibut is baked in a creamy sauce with Parmesan cheese and Ritz crackers, and it comes out tender and flaky with a crispy crust. Serve it with your favorite sides for a complete meal.
