Perfect Summer Fruit Salad image

The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
2 cups blueberries

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

1 pound fresh strawberries (sliced and halved (about 3 cups))
1 pound diced fresh pineapple (about 3 cups)
1 pint fresh blueberries (about 2 cups)
5 kiwi fruit (peeled and cut into bite-sized pieces (about 2 cups))
2 cups seedless red grapes
1 large banana* (peeled and cut into bite sized pieces (about 1 cup))
Chopped fresh mint (optional)
zest of 1/2 medium orange
juice of 1/2 the same medium orange (about 3 tablespoons)
zest of 1 small lime (or 1/2 small lemon)
juice of the same 1 small lime (or 1/2 small lemon)
3 tablespoons honey
1 teaspoon pure vanilla extract
1 tablespoon poppy seeds

Steps:

  • If you will not be serving the fruit salad right away, place all of the fruit except the banana in a large serving bowl: strawberries, pineapple, blueberries, kiwi, and grapes.
  • In a small bowl or large measuring cup, whisk together the dressing: orange zest and juice, lemon zest and juice, honey, vanilla extract, and poppy seeds.
  • Pour the dressing over the fruit and with a large spoon, toss gently to combine. Cover and refrigerate for at least 30 minutes to allow the juices to marry (1 hour is even better). Just before serving, stir in the banana. Sprinkle with fresh mint. Enjoy!

1 pint strawberries sliced (reserve 8 slices)
2 tablespoons sugar
1 pint blueberries
2 bananas sliced
2 tablespoons lemon juice
3 oranges peeled and sliced crosswise
1 (20-ounce) can pineapple slice quartered (reserve 1 whole slice)
1/2 cup orange liqueur
powdered sugar Sifted
mint leaves fresh

Steps:

  • In a medium bowl, stir strawberries and sugar set aside.In a 2-quart serving bowl, place 1 1/2 cups of the blueberries set remaining blueberries aside.Sprinkle bananas with lemon juice. Place bananas on top of blueberries. Add a layer of strawberries with sugar, then oranges. Arrange quartered pineapple slices in a circle around outer edge. Fill center of circle with remaining 1/2 cup blueberries. Top blueberries with reserved pineapple slice. Finish arrangement with eight reserved strawberry slices around pineapple slice. Carefully pour liqueur over the fruit. Cover and chill for 1 hour.Just before serving, top with powdered sugar and decorate with mint leaves.

My Aunt Mona served this dressing with a large bowl of mixed fruit 60 years ago. It has been a family favorite for special occasions ever since. She layered the fruits in a glass bowl so their colors and textures could be admired by everyone. The dressing was offered in a gravy boat or served in a separate bowl. These are some of the fruits she liked to use: pineapple pieces; diced apples; peaches; pears; melon chunks or balls; grapes; bananas; Mandarin orange segments--and even nuts and chopped dates. Feel free to use your favorites. Amount of servings depends upon how much fruit is used and how big the bowl is.

3 eggs, beaten light Then add
3/4 cup sugar (Beat with eggs until fluffy)
1 orange, juice of, squeezed from it
1 lemon, juice of, squeezed from it
1 cup pineapple juice (Juice from 1 can pineapple rings or chunks.)
1 tablespoon cornstarch (Dissolved in some of the juice.)
1 cup heavy cream, whipped until stiff and folded into pudding mixture after it is cooked and chilled

  • Cook all ingredients EXCEPT WHIPPED CREAM in double boiler until thick. When consistency of pudding, take off from heat. Pour into bowl and chill in refrigerator until ready to serve.
  • Whip 1 cup of heavy whipping cream until stiff and fold into chilled mixture until smooth. Best served over assorted, cut up fruits.
