A quick and easy tofu scramble recipe for breakfast that both vegans and non vegans will love.

Categories     Breakfast     Main Course

Time 15m

Number Of Ingredients 9

1 bell pepper, diced
1/2 cup diced vegetables of choice, such as onion, zucchini, mushrooms, or carrot
1 tbsp minced garlic
16 oz tofu, silken or firm
optional 1 tbsp nutritional yeast
1 tsp each: curry powder and onion powder
1/2 tsp ground turmeric
1/2 tsp salt, and pinch of black pepper if desired
optional handful spinach or kale

Steps:

  • Grease a nonstick pan, or add a little oil to prevent sticking. Sauté the vegetables and garlic over medium heat until lightly browned. Drain the tofu, then add it to the pan. If using firm tofu, break it up with a spatula (silken tofu will break up on its own as you stir). Add the spices and salt. Continue to cook-stirring occasionally-until the tofu is hot and extra liquid has evaporated so it looks like scrambled eggs. Stir in the spinach until it wilts, then serve with toast, home fries, sliced avocado, salsa or hot sauce, a sprinkle of black pepper and nutritional yeast, or whatever you wish. DELICIOUS SCRAMBLED TOFU

Delicious Scrambled Tofu image

I adapted this from a friend's recipe. My family requests this a lot for breakfast. Tastes great on toast or by itself. I LOVE avocado and find it tastes great sliced on toast with the scrambled tofu.

Time 25m

Yield 6 serving(s)

Number Of Ingredients 10

1 lb firm tofu
1 tablespoon soy sauce (I use the healthier BRAGG liquid aminos)
1 tablespoon onion powder or 2 green onions, chopped
1/2 teaspoon salt
1/4 teaspoon turmeric
1 tablespoon italian seasoning
1 green bell pepper, chopped
1 -2 tomatoes, chopped
1 tablespoon canned green chilies (optional) or 2 tablespoons dried green pimientos (optional)
black salt, to taste (this sulferic salt is optional but makes a huge difference in making the tofu taste more like eggs,)

Steps:

  • Crumble tofu with hands.
  • In a skillet mix tofu and everything except the tomatoes together well. Heat for 5 to 8 minutes.
  • Add the tomatoes and then continue heating until thoroughly heated (about 5 to 8 minutes more.

Tips:

  • Choose the right tofu: For the best results, use extra-firm or firm tofu. This type of tofu will hold its shape better when cooked and will absorb the flavors of the marinade more easily.
  • Press the tofu: Pressing the tofu helps to remove excess water, which will result in a firmer, more flavorful tofu scramble. To press the tofu, wrap it in a few layers of paper towels and place it on a plate. Place another plate on top of the tofu and weigh it down with something heavy, such as a can of beans or a heavy skillet. Allow the tofu to press for at least 30 minutes.
  • Marinate the tofu: Marinating the tofu in a flavorful mixture of spices and herbs will help to add flavor and depth to the tofu scramble. You can use any combination of spices and herbs that you like, but some popular options include garlic powder, onion powder, paprika, chili powder, and cumin.
  • Cook the tofu over medium heat: Cooking the tofu over medium heat will help to prevent it from sticking to the pan and will allow it to cook evenly throughout. If you cook the tofu over too high heat, it will likely burn on the outside before it is cooked through on the inside.
  • Stir the tofu frequently: Stirring the tofu frequently will help to prevent it from sticking to the pan and will also help to ensure that it cooks evenly.
  • Add vegetables and other ingredients: Once the tofu is cooked through, you can add vegetables, herbs, and other ingredients to the scramble. Some popular additions include bell peppers, onions, spinach, mushrooms, and cheese.

Conclusion:

Scrambled tofu is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is a great way to use up leftover tofu, and it is also a healthy and affordable option. With a little planning and preparation, you can easily make a delicious scrambled tofu dish that your whole family will enjoy.
