4 boneless skinless chicken breasts (OR 4-6 chicken thighs)
salt and pepper (to taste)
1 tablespoon oil
2 tablespoons butter
1 tablespoon honey
½ teaspoon each dried oregano, dried basil, garlic powder
1 tablespoon butter
2 teaspoons minced garlic
½ cup chicken broth (I used low sodium )
⅔ cup heavy cream (OR half & half plus 1 tablespoon corn starch)
juice of ½ lemon (about 2 tablespoons)
1 tablespoon chopped fresh dill
cracked black pepper (to taste)

Steps:

  • Add chicken to pan, brown chicken 2-3 minutes on each side. Transfer chicken to a plate (it won't be cooked through at this point). Add butter and garlic and saute for 1 minute until fragrant. Add chicken broth, heavy cream, and lemon juice and stir over medium heat for 2-3 minutes.
  • Return chicken to pan and transfer to preheated oven. Bake for 15 minutes or until chicken is cooked through. Spoon pan sauce over the chicken and sprinkle dill over the chicken and sauce, add cracked black pepper to taste and serve.

Salt & freshly ground pepper, to taste
3 teaspoons extra-virgin olive oil, or canola oil, divided
¼ cup finely chopped onion
3 cloves garlic, minced
1 cup reduced-sodium chicken broth
2 teaspoons flour
2 tablespoons chopped fresh dill, divided
1 tablespoon lemon juice

Steps:

SKILLET LEMON AND DILL CHICKEN

Skillet Lemon and Dill Chicken image

Provided by By Alex Snodgrass

Time 25m

Number Of Ingredients 10

1.5 lbs. Chicken Cutlets*
1 tsp kosher salt
1/2 tsp freshly cracked black pepper
1/3 cup arrowroot starch
3 tbsp almond flour
3 tbsp + 1 tsp extra virgin olive oil
2 cloves garlic, minced
1/2 cup chicken broth
1/4 cup freshly squeezed lemon juice (or 1 large lemon)
2 tbsp finely chopped fresh dill

Steps:

  • Season the chicken cutlets generously on both sides with kosher salt and pepper. In a wide bowl or plate, combine the arrowroot and almond flour. Individually dredge each of the chicken cutlets by rolling it into the arrowroot flour mixture until well coated. Shake off excess and set aside on a clean plate and continue until all the chicken is coated. Heat 3 tbsp of the oil in a large non-stick skillet over medium-high heat. When hot, but not smoking, sear the chicken until golden brown on both sides and cooked through, about 4 minutes per side. Transfer cooked chicken to a clean plate and set aside. You will likely need to do this in two batches. Continue until all chicken is cooked through. Reduce heat to medium-low and add the remaining teaspoon of olive oil to the same skillet. Add the garlic and gently cook, stirring and being careful not to burn, for 30 seconds. Pour in the broth, lemon, and dill and stir to combine. Nestle the browned chicken back into the sauce and let simmer until the sauce has thickened and coated the chicken, 3 to 5 more minutes. Serve and enjoy.

DELICIOUS LEMON-DILL CHICKEN

Delicious Lemon-Dill Chicken image

Is there anything better than lemon and dill together? I don't think so! The great thing about this recipe is it is versatile. It goes great with seafood as well so substitute your favorite kind of fish for the chicken and enjoy!

Time 20m

Yield 2 serving(s)

Number Of Ingredients 10

3/4 cup chicken broth mixed with 2-tsp flour
2 tablespoons lemon juice
1/2 teaspoon minced garlic
1/4 cup snipped fresh dill
1 tablespoon butter
5 ounces boneless chicken breasts
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon oil
2 tablespoons flour

Steps:

  • Mix together 2-tbsp flour, salt and pepper. Coat chicken with mixture.
  • Heat oil in large non-stick skillet. Add breasts and cook over medium-high heat until golden brown, turning once and cooked through.
  • Remove chicken to a plate.
  • Add chicken broth flour mix, lemon juice and garlic to skillet. Bring to a boil, then reduce to a simmer for 1-minute or until slightly thickened.
  • Remove skillet from heat and add butter and fresh dill.
  • Return chicken to skillet and coat with sauce.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and prevent any scrambling.
  • Choose the Right Lemon: For the best flavor, use fresh lemons that are bright yellow and heavy for their size. Avoid lemons that have any green spots or blemishes.
  • Zest the Lemons Before Juicing: Zesting the lemons before juicing them will help you get the most flavor out of the lemons. Use a microplane grater or zester to remove the zest from the lemons.
  • Don't Overcook the Chicken: Chicken breasts can easily become dry and overcooked, so be careful not to cook them for too long. The best way to tell if the chicken is done is to use a meat thermometer. The internal temperature of the chicken should reach 165°F (74°C).
  • Let the Chicken Rest: After cooking the chicken, let it rest for a few minutes before cutting into it. This will help the juices redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

This delicious lemon dill chicken recipe is a quick and easy weeknight meal that is sure to please the whole family. The bright and tangy lemon flavor pairs perfectly with the tender chicken and the fresh dill adds a touch of herbaceousness. Serve this chicken with your favorite sides, such as rice, pasta, or roasted vegetables.
