Time 35m

Yield 4 servings

Number Of Ingredients 7

3 to 5 sprigs fresh thyme
Four 7- to 8-ounce wild salmon fillets
4 tablespoons extra-virgin olive oil
1/2 lemon, juiced
Freshly ground black pepper
8 ounces feta cheese
6 ounces white wine

Steps:

  • Preheat the oven to 375 degrees F.
  • In a small baking dish arrange the sprigs of thyme along the bottom.
  • Wash the fillets and dry them with paper towels. Rub the fish with the extra-virgin olive oil and the lemon juice, and then season with black pepper, to taste.
  • Arrange the fillets in the baking dish on top of the thyme. Next, break up the feta and sprinkle on top of the salmon. Add the white wine to the dish and bake for 20 minutes. Remove the fish from the oven and serve.

Tips:

  • Choose the right salmon fillet: Look for a fillet that is about 1 inch thick and has a nice, even shape. Avoid fillets that are too thin or too thick, as they will cook unevenly.
  • Pat the salmon fillet dry before cooking: This will help the feta crust to adhere to the salmon and prevent it from becoming soggy.
  • Use a good quality feta cheese: Feta cheese is the key ingredient in this recipe, so it's important to use a good quality cheese. Look for a feta cheese that is creamy and flavorful.
  • Don't overcook the salmon: Salmon is a delicate fish, so it's important not to overcook it. Cook the salmon until it is just cooked through, or until it reaches an internal temperature of 145 degrees Fahrenheit.
  • Serve the salmon immediately: Salmon is best served immediately after it is cooked. This will ensure that the salmon is moist and flavorful.

Conclusion:

This feta-crusted salmon recipe is a delicious and easy way to cook salmon. The feta crust adds a nice flavor and texture to the salmon, and the salmon cooks quickly and evenly. This recipe is perfect for a weeknight dinner or for a special occasion.
