Time 15m

Yield 2 serving(s)

Number Of Ingredients 13

1 1/2 cups cooked chicken, diced
1/2 avocado, diced
2 tablespoons onions, minced
2 tablespoons pimentos, minced
1 tablespoon fresh parsley, minced
2 tablespoons celery, minced (optional)
3 tablespoons mayonnaise (more if desired)
1/2 teaspoon lemon juice (bottled is fine here, but fresh is even nicer)
2 -5 drops hot pepper sauce
salt
pepper
2 sandwich rolls, such as french rolls, sub rolls, ciabatta
2 leaves lettuce

Steps:

  • Combine all ingredients except rolls and lettuce in a medium bowl.
  • Slice rolls in half, and toast if desired. Lay lettuce leaves on bottom halves of rolls, and divide chicken salad between them. Place roll tops on sandwich.

Tips:

  • Use ripe avocados for a creamier and more flavorful salad. To check for ripeness, gently press the avocado; it should yield to gentle pressure but not be mushy.
  • For a more flavorful chicken, marinate it in a mixture of olive oil, lemon juice, garlic, and herbs before cooking. This will help the chicken stay moist and tender.
  • If you don't have a grill, you can cook the chicken in a skillet over medium heat. Just be sure to cook it until it is cooked through, with an internal temperature of 165 degrees Fahrenheit.
  • Feel free to add other ingredients to the salad, such as chopped red onion, celery, or cucumber. You could also add a drizzle of honey or a squeeze of lemon juice to taste.
  • Serve the salad immediately on toasted bread or rolls. You can also pack it up for lunch the next day.

Conclusion:

This chicken avocado salad sandwich is a delicious and easy-to-make lunch or dinner option. It's packed with flavor and nutrients, and it's sure to be a hit with everyone at your table. So next time you're looking for a quick and easy meal, give this recipe a try.
