Thick rings of Roasted Delicata Squash will be an impressive side dish on your Thanksgiving table. There is a rich, delicious crust of caramelized goodness on every slice that tastes just amazing. Roasting the squash in a hot oven brings out the sugar in the flesh and caramelizes the slices. The firmer texture of the skin compliments the sweet, velvety texture of the squash.

2 tablespoons olive oil
3 pounds Delicata squash
1/2 teaspoon salt flakes
1/4 teaspoon freshly ground white or black pepper
Salt flakes for garnish (optional--see Notes)
2 tablespoons chopped fresh parsley
Rosemary sprigs

Steps:

  • Preheat oven to 450°F.
  • Lightly spray 2 large nonstick baking sheets with oil.
  • Wash the squash under the cold water tap to remove any soil particles, pat dry.
  • With a sharp knife, trim 1/4-inch off the ends of each squash and cut across into 1-inch slices/rings.
  • Using a serrated knife, grapefruit spoon or paring knife scrape around the inside of each ring, removing the seeds and membranes.
  • Add the slices to a large bowl or a closable plastic bag and drizzle olive oil over them making sure each slice is coated with the oil.
  • Lay the slices flat on the prepared baking sheets and bake in the center of the oven until you see light caramelizing around the bottom edges, about 15-18 minutes, flip the slices and roast another 5-6 minutes.
  • Remove from the oven and transfer to a serving plate, garnish with the salt flakes, chopped parsley and rosemary sprigs.

10 oz delicata squash
1 cup panko breadcrumbs, or whole wheat bread crumbs
½ cup parmesan cheese, grated
2 teaspoons garlic powder
1 teaspoon paprika
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon kosher salt
½ teaspoon black pepper
3 large eggs
1 cup all-purpose flour
¼ cup dijon mustard
1 tablespoon whole grain mustard
1 tablespoon honey

Steps:

  • Preheat oven to 425˚F (220˚C).
  • Cut 1 inch (2.5 cm) off the top and bottom of each squash, so you reach the seeds. Discard the top and bottom pieces. Slice the remaining squash into ¼-inch (½ cm) thick rounds.
  • Use a metal teaspoon to scoop out the seeds from the rings.
  • In a medium bowl, whisk together the bread crumbs, Parmesan, garlic powder, paprika, basil, oregano, salt, and pepper.
  • In another bowl, beat the eggs. Add the flour to another bowl.
  • Coat each squash ring in the flour, tapping off any excess. Next, coat in the eggs. Finally, coat in the bread crumb mixture, making sure to press the breadcrumbs into the squash to adhere. Place the coated rings on a baking sheet.
  • Bake the squash rings for 15-20 minutes, or until golden brown, flipping once halfway through cooking.
  • Make the honey mustard dipping sauce: In a small bowl, mix together the Dijon, whole-grain mustard, and honey. Use immediately or refrigerate in an airtight container until ready to serve, up to 3 days.

1 delicata squash...1/2 inch slices
1 Tbsp olive oil
2 Tbsp butter, melted
salt & pepper...to taste
1 Tbsp chopped fresh or dried...thyme

Steps:

  • 1. Pre-heat oven to 425F Wash & slice squash, into 1/2 to 3/4 inch slices. Cut out center with the seeds.
  • 2. Put slices on a cookie sheet, (I line mine with foil) Do not let them touch each other.
  • 3. Brush on the mixed, olive oil & butter. Turn and brush again. Salt & pepper, and thyme...if wanted. Bake for 20 minutes. Turn once after 10 minutes. When ready to serve stack up onto a plate....like a leaning tower !...The skin on delicata can be eaten.

1 tablespoon olive oil
1 teaspoon salt

Steps:

  • Place squash halves cut side down on a cutting board. Slice into 3/8-inch slices. Transfer slices to a bowl. Drizzle with olive oil; add salt and cayenne pepper. Toss to coat squash with oil.

I find that some squash are so hard to peel, but this recipe dispenses with that step. Just cook the rings with the peel on. It's quite soft once cooked. :)

2 medium delicata squash
- olive oil
- kosher salt and pepper
3 large shallots, minced and mixed with light oil
1 tablespoon(s) dried thyme

Steps:

  • Preheat oven to 400'F.
  • Cut the ends off the squash. Then, using a fillet knife clean out the insides of the squash, remove the stringy parts and the seeds. Then cut them into 1/2" pieces. Try to be consistent. The rings will cook much better if they are the same size.
  • If all the insides don't come out when you're using the knife you can clean the rest out once they are cut in rings.
  • Put the rings in a large bowl and pour a good portion of olive oil on them, toss to coat. Add the salt, pepper, shallot and thyme and toss again.
  • Get yourself a large oven tray with sides and oil it using one of the squash rings, this works really good. Use the oil from the bowl, then put the rings on on the tray in one layer.
  • Put in the preheated oven and bake for 20-25 minutes. If you want, flip the rings over 1/2 way through the cooking process to ensure even browing. Serve along with rice or meat.
