about 8 cups of torn salad greens
2 -3 tomatoes, cut in wedges
2 -3 hard cooked eggs, cut in wedges
black olives, if desired
1 lemon
DRESSING
3/4 cup chili sauce (i like grandma's brand)
1/3 cup mayonaise
1/4 cup sour cream or greek yogurt

fresh squeezed juice of 1/2 lemon (cut other 1/2 in wedges to serve with salad)
1/2 teaspoon worchestershire sauce
salt & pepper to taste

Steps:

  • 1. Hard cook eggs and chill. Make dressing by mixing all ingredients together and chilling in the fridge so flavors can marry. Prepare salad greens and chill until crisp. I use 1/2 romaine and 1/2 spring mix or spinach. Cut tomatoes in wedges.
  • 2. When all salad ingredients are well chilled, assemble salads in 4 shallow bowls or plates. Lettuce, shrimp or crab on top and tomato and egg wedges around sides. Top with dressing and add additional fresh squeezed lemon if desired. Enjoy! This salad serves 4 for a main entree or 8 as side salads.

Tips for Making Dee's Seafood Salad:

  • Choosing the Right Seafood: Opt for high-quality, fresh seafood that is firm to the touch and has a mild, briny aroma. Consider using a variety of seafood, such as shrimp, crab, and lobster, for a more flavorful salad.
  • Proper Cooking: Ensure that the seafood is cooked correctly. Overcooking can make it tough and rubbery. For shrimp, boil them for 1-2 minutes or until they turn opaque and pink. For crab and lobster, steam them for 5-7 minutes or until the meat is opaque and tender.
  • Chilling the Seafood: After cooking, immediately transfer the seafood to a bowl filled with ice water to stop the cooking process and preserve its texture. This step also helps prevent overcooking.
  • Preparing the Vegetables: Dice the vegetables into small, uniform pieces to ensure even cooking and a cohesive salad. For a more colorful and nutritious salad, use a variety of vegetables, such as celery, carrots, red onion, and bell peppers.
  • Making the Dressing: Whisk together all the ingredients for the dressing, ensuring that the mayonnaise and sour cream are well combined. Adjust the proportions of the ingredients to achieve your desired taste and consistency.
  • Combining the Ingredients: Gently combine the cooked seafood, vegetables, and dressing in a large bowl. Be careful not to overmix, as this can break up the seafood and make the salad mushy.
  • Chilling Before Serving: Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld and develop. This step also helps the salad maintain its shape and consistency.

Dee's seafood salad is a delectable dish that combines the freshness of seafood with the crunch of vegetables and the tanginess of a creamy dressing.
