Pork chops are a versatile and affordable cut of meat that can be cooked in a variety of ways. In this article, we'll share two delicious recipes for pork chops: a classic pan-fried pork chop with a flavorful herb butter, and a juicy baked pork chop with a tangy honey mustard glaze. Both recipes are easy to follow and perfect for a weeknight meal. The pan-fried pork chop is coated in a mixture of flour, salt, and pepper, then pan-fried in butter until golden brown and cooked through. The herb butter is made with a combination of parsley, thyme, rosemary, and garlic, and adds a delicious flavor to the pork chop. The baked pork chop is marinated in a mixture of honey, mustard, olive oil, and spices, then baked in the oven until cooked through. The honey mustard glaze caramelizes on the pork chop, creating a delicious crust. Both recipes are served with a side of roasted vegetables or mashed potatoes.

SOUTHERN STYLE SMOTHERED PORK CHOPS WITH BUTTERMILK GRAVY- DEE DEE'S

Southern Style Smothered Pork Chops with Buttermilk Gravy- Dee Dee's image

These smothered pork chops are simply wonderful! We enjoyed these with mashed potatoes, fresh field peas, scalloped tomatoes and some nice fresh crusty french bread. Even though my photo only shows 2 chops, this recipe is for 4. I cut down the portions when I'm just cooking for 2.

Time 10m

Number Of Ingredients 12

1 c all purpose flour
2 Tbsp onion powder
2 Tbsp garlic powder
1 tsp salt
1 tsp cayenne pepper
1/2 tsp pepper, freshly ground
4 pork chops, 3/4-inch thick, bone in
1/4 c olive oil
1 c chicken broth
1/2 c buttermilk
chopped fresh flat-leaf parsley, for garnish
chopped fresh green onion, for garnish

Steps:

  • 1. Put the flour in a shallow platter and add the onion powder, garlic powder, cayenne, salt, and pepper; mix with a fork to distribute evenly. Pat the pork chops dry with paper towels to remove any moisture and then dredge them in the seasoned flour; shaking off the excess. RESERVE THE LEFTOVER SEASONED FLOUR MIXTURE FOR THE GRAVY.
  • 2. Heat a large sauté pan or cast iron skillet over medium heat and coat with the oil. I usee an iron skillet, it's heavy and you can count on an even heat. I'm pretty sure it's a southern thang as well.
  • 3. When the oil is nice and hot, lay the pork chops in the pan in a single layer and fry for 3 to 4 minutes on each side until golden brown.
  • 4. Remove the pork chops from the pan and add a little sprinkle of seasoned flour (about 2 spoonfulls) to the pan drippings. Mix the flour into the fat to dissolve and then pour in the chicken broth in. Let the liquid cook down for 5 minutes to reduce and thicken slightly. Stir in the buttermilk to make creamy gravy and return the pork chops to the pan, covering them with the sauce. Simmer for 5 minutes until the pork is cooked through. Season with salt and pepper; garnish with chopped parsley and/or chopped green onions before serving.

THE BEST JUICY SKILLET PORK CHOPS

The Best Juicy Skillet Pork Chops image

Time 45m

Yield Makes 4 servings

Number Of Ingredients 14

4 pork chops, about 1-inch thick and 6 to 7 ounces each, see notes
Salt, to taste
1 tablespoon all-purpose flour
1 teaspoon chili powder, see our homemade chili powder recipe
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground black pepper
1 tablespoon neutral oil like avocado oil or vegetable oil
1 cup low-sodium chicken stock, see our homemade chicken stock recipe
1 tablespoon apple cider vinegar
2 teaspoons honey or brown sugar
1 tablespoon butter
2 tablespoons chopped fresh parsley, optional

Steps:

  • Take the pork chops out of the refrigerator and season on both sides with salt - we use just less than 1/4 teaspoon of fine salt per pork chop. Set the chops aside to rest for 30 minutes.
  • Meanwhile, make the spice rub. In a small bowl, mix the flour, chili powder, garlic powder, onion powder, smoked paprika, and 1/2 teaspoon of black pepper.
  • After 30 minutes, use a paper towel to pat the pork chops dry, then rub both sides of the chops with the spice rub.
  • Heat the oil in a skillet (with a lid) over medium-high heat. When the oil is hot and looks shimmery, add the pork. Cook until golden, 2 to 3 minutes.
  • Flip the pork so that the seared side is facing up. If there is a fattier side of the pork, use kitchen tongs to hold the chops, fat-side-down until it sizzles and browns slightly; about 30 seconds.
  • Reduce the heat to low, then cover the skillet with a lid. Cook 6 to 12 minutes or until an instant-read thermometer reads 145° F when inserted into the thickest part of the chop. Cook time depends on the thickness of the chops, so check for doneness at 5 minutes, then go from there, checking every 2 minutes after that. If you do not have a thermometer, you will know they are done, if, when cutting into the chops, the juices run clear.
  • Transfer pork chops to a plate, then cover loosely with aluminum foil. Let the pork rest for 5 minutes.
  • While the pork rests, make the pan sauce. Increase the heat to medium-high, then add the chicken stock, vinegar, and honey. Use a wooden spoon to scrape the bottom of the pan so that any stuck bits of pork come up.
  • Bring the sauce to a simmer and cook until reduced by half. Taste, then adjust the seasoning with additional salt, vinegar, or honey.
  • Slide the skillet off of the heat and when the sauce is no longer simmering, swirl in the butter.
  • Slide the pork chops back into the pan and spoon some of the sauce on top. Alternatively, slice the chops, then place them back into the pan. Scatter fresh parsley over the pork, and then serve.

OBIE GREEN'S SMOTHERED PORK CHOPS

Obie Green's Smothered Pork Chops image

I started making this delicious dish almost 40 yrs ago when I found the recipe in a Woman's Day magazine. They are truely the best pork chops I have ever tasted or made. Anyone who has had them always give them rave reviews. The original recipe calls for 1 inch thick pork chops but I never make it with ones that thick. I have...

Time 1h40m

Number Of Ingredients 11

6 bone in center cut or lean loin pork chops
1/2 tsp salt
1/4 tsp white pepper
1/4 c any bisquick or pancake mix
2 Tbsp vegetable oil
3 medium onions, chopped
1 tsp salt
1/4 tsp white pepper
1 Tbsp sugar
1/4 c flour
2 c boiling water

Steps:

  • 1. Wipe chops with paper towels to dry off; sprinkle with 1/2 tsp. salt and 1/4 tsp white pepper; coat with pancake mix. Heat oil in large skillet; brown chops on both sides and place in casserole. I use a large lasagna pan, so that there's plenty of room for the gravy not to spill over) Saute/fry onions with remaining salt, pepper and sugar in same skillet, till lightly browned. Stir in flour; cook for at least 1 - 2 minutes to cook the flour taste out. Gradually add in boiling water while stirring with a whisk. Cook on medium heat, stirring constantly, till thickened and boils. Pour over chops and cover with foil. Bake at 350 for 1 hour 20 min. Remove chops to serving platter; keep hot. Strain gravy through a sieve, pressing onions with a spoon. (I skip this part bcuz I love the onion pieces in the gravy) Skim fat from gravy if necessary. Serve mashed potatoes and the gravy with chops. Yummo!

  • 3. Note: I have tried making these in a slow cooker, and find you have to zig zag stack them and they have a tendency to fall apart...I like keeping them in a single layer,so they don't break up so much. If you are just cooking for two, and can put them in a single layer, that may work better. But personally, I love leftovers of this dish, and make alot of these yummy pork chops and mashies so we can have reruns. hehe

BUSY-DAY PORK CHOPS

Busy-Day Pork Chops image

It was time to use or lose some pork chops I had in the fridge, so I dressed them in bread crumbs and Parmesan and baked them up. Necessity sure is the mother of invention, and in this case I invented an amazing healthy pork chop recipe. -Dee Maltby, Wayne, Ohio

Tips:

  • Choose the right pork chops. Look for chops that are at least 1 inch thick and have a good amount of marbling. This will help ensure that they stay juicy and flavorful during cooking.
  • Season the pork chops generously. A simple combination of salt, pepper, and garlic powder is a good place to start. You can also add other spices or herbs, such as paprika, cumin, or oregano.
  • Sear the pork chops over high heat. This will create a nice crust on the outside of the chops and help seal in the juices. Sear the chops for 2-3 minutes per side, or until they are browned.
  • Reduce the heat and cook the pork chops until they are cooked through. The internal temperature of the pork chops should reach 145 degrees Fahrenheit. This will take about 8-10 minutes per side.
  • Let the pork chops rest before serving. This will allow the juices to redistribute throughout the chops, making them more tender and flavorful.

Conclusion:

Dee's pork chops are a delicious and easy-to-make dish that can be enjoyed by the whole family. With just a few simple ingredients and a little bit of time, you can create a meal that is sure to impress. So next time you're looking for a quick and easy weeknight dinner, give Dee's pork chops a try. You won't be disappointed!
