Steps:
- Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.
- Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.
- For the sauce, heat the olive oil in the same pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper.
- Return the meatballs to the sauce, cover, and simmer on the lowest heat for 25 to 30 minutes, until the meatballs are cooked through. Serve hot on cooked spaghetti and pass the grated Parmesan.

DEE DEE'S ITALIAN MEATBALLS AND PASTA
I found an older model electric pasta machine in the box and like new for $8 in a thrift store. Previous owner(s) had obviously not used this machine very often. SCORE! I couldn't wait to get home and play with this new gadget and I really wanted to make an impression with the 1st meal since I was making my own pasta. I love...

- 3. SAUCE: Heat oil in a large skillet over medium heat. Add onion, bell pepper and garlic; cook until tender.
- 4. Add red pepper flakes, fennel seeds, tomatoes, tomato sauce, basil, Italian seasoning, salt and pepper; stir. Bring to a slow boil, reduce heat slighly and let simmer for 15 minutes covered. Remove lid and simmer another 15 minutes, stirring occasionally, to thicken.

SWEDISH MEATBALLS - DEE DEE'S
In Sweden, meatballs are made with ground beef or a mix of ground beef, pork and sometimes veal, mixed with breadcrumbs soaked in milk and finely chopped onions, some broth, and, occasionally, cream. They are seasoned with white pepper or allspice and salt. We enjoyed an early afternoon lunch compliments of Elton Brown's 2005...

- 2. Preheat oven to 200 degrees.
- 3. Tear bread into small pieces and place in a small bowl or measuring cup. Pour whole milk over bread; set aside.
- 4. Saute' onions in 1 Tbsp of butter in a 12-inch sauce pan until tender. Once tender; set aside.
- 5. In the bowl of a stand mixer, combine the bread mixture, meats, seasonings and sauteed onions. Mix at a med-low speed until well combined, 1 to 2 minutes.
- 6. With hands, form 30 meatballs about 1-oz each, the size of a walnut.
- 7. Melt remaining butter in 12-inch sauce pan and add meatballs. Brown on all sides, about 10 to 12 minutes.
- 8. Once the meatballs are cooked, removed to a oven-proof dish and place in preheated oven. Leave drippings in pan.
- 9. Reduce heat to low and add flour to pan drippings. Whisk until lightly browned. Gradually stir in beef broth whisking until sauce thickens.
- 10. Once sauce has thickened to desired consistancy, stir in heavy cream, stir for 2 to 3 minutes.
- 11. Remove meatballs from oven and pour sauce over meatballs. Serve over egg noodles, rice or mashed potatoes.
Tips:
- Choose the right ground beef. A good quality ground beef will make all the difference in the flavor of your meatballs. Look for ground chuck or ground sirloin, which have a good balance of fat and lean meat.
- Use a light touch when mixing the ingredients. Overmixing can make the meatballs tough, so mix just until the ingredients are combined.
- Form the meatballs into uniform size. This will help them cook evenly.
- Brown the meatballs before simmering them. This will help to seal in the juices and give them a nice flavor.
- Use a good quality tomato sauce. The sauce is an important part of the meatballs, so make sure to use one that you like. A homemade sauce is always best, but a store-bought sauce can also be used.
- Simmer the meatballs for at least 30 minutes. This will help to tenderize them and allow the flavors to meld.
- Serve the meatballs with your favorite sides. Some popular options include spaghetti, mashed potatoes, or rice.
