This is Day 21: Breakfast, on the 21 Day Wonder Diet. These are totally delicious, and easily doubled to feed the family! This breakfast is to be followed by a mid-morning snack of 1 muesli muffin (See day 20: Breakfast, Recipe #366085 ).

2 slices shortcut bacon, rashers chopped finely
2 eggs
2 slices rye bread, toasted
1 small tomatoes, chopped finely

Steps:

  • Preheat oven to 200°C.
  • Divide bacon between 2 muffin pan holes. Crack an egg into each hole. Bake about 15 minutes, or until egg is set. Loosen edges of pies from pan.
  • Serve pies on toast, sprinkled with tomato.

1 egg white
2 teaspoons vegetable oil
1/2 cup self-rising flour
1/3 cup skim milk
1 tablespoon dried dates, finely chopped
1 tablespoon brown sugar
1 tablespoon low-fat ricotta cheese

Steps:

  • Preheat oven to 180C/160C fan-forced. Spray 2 holes of a half-cup rectangle or round muffin pan with cooking oil.
  • Whisk egg white with a fork in medium bowl; stir in oil, flour, milk, dates, and sugar, do not overmix. Divide mixture between pan holes.
  • Bake for 20 minutes. Serve warm loaves with cheese.

1 cup hot coffee
1 cup pitted dates (cut into 1cm size)
1 1/4 cups walnuts (roughly cut)
3/4 cup rolled oats
2 ripened bananas (mashed)
1 apple, chopped (without the skin and core)
1 1/4 cups plain flour
1 teaspoon baking soda
1/4 cup soft brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, combine Ingredients A and soak for 15 minutes.
  • In another bowl, combine Ingredients B and mix well.
  • In a separate bowl, sieve flour and baking soda. Ensure baking soda is not lumpy. Add in soft brown sugar. Mix well and put aside.
  • Add Ingredients B to Ingredients A. Mix well.
  • Then add Ingredients C and mix well.
  • Pour batter into the prepared loaf pan. Bake in preheated oven for 50 - 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Let the loaf cool in the tin for at least 5 minutes, then turn out onto a cooling rack to cool completely.
