RICE KRISPIES DATE BALLS (AKA ANGEL COOKIES)

Rice Krispies Date Balls (Aka Angel Cookies) image

Another recipe from my Aunt's recipe clippings. This one also came from the Sept 19, 1969 Chicago Tribune originally. The clipping is crinkled with old yellow tape holding it together to make sure the recipes stayed intact. :) These are not like the typical angel cookies at all - they are little balls of dates, coconut, and Rice Krispies rolled in powdered. Don't use the prechopped dates as they aren't sticky enough - buy the whole pitted dates and chop them yourself. Also be sure to use the canned coconut..the kind that comes in bags is too dry and you will have a hard time getting the cookies to roll up otherwise.

PAULA DEEN'S DATE-NUT JINGLE BALLS

PAULA DEEN'S DATE-NUT JINGLE BALLS image

Yield 45 cookies

Number Of Ingredients 8

3/4 cup butter
2 eggs, beaten
2 cups sugar
1 pkg. (8 oz) chopped dates
2 tsp. vanilla extract
1 cup chopped nuts
1 1/2 cups Rice Krispies cereal
3 cups sweetened, flaked coconut

Steps:

  • In a pot, melt the butter over medium heat. Add the eggs, sugar and dates. Bring to a boil, and reduce the heat to low. Stir continuously for 10 minutes at low, and remove from heat. Stir in the vanilla, nuts and cereal. Cool the entire mixture, in fridge for 2 hours. Shape into balls, and roll into the coconut.

Tips:

  • Use good quality dates: Soft, plump dates will produce the best date balls. Look for dates that are free of blemishes and have a deep, rich color.
  • Pit the dates: Before making the date balls, be sure to pit the dates. You can do this by using a sharp knife to cut a slit down the side of the date and remove the pit.
  • Soak the dates: Soaking the dates in hot water for 10-15 minutes will help to soften them and make them easier to blend. You can also soak the dates overnight in the refrigerator for a more intense flavor.
  • Use a food processor: A food processor is the best tool for making date balls. It will help to quickly and easily blend the dates and other ingredients together until they are smooth and well-combined.
  • Add your favorite mix-ins: Feel free to add your favorite mix-ins to the date balls, such as nuts, seeds, dried fruit, or spices. This is a great way to customize the date balls to your own liking.
  • Roll the date balls in a coating: Once the date balls are formed, you can roll them in a coating of your choice, such as chopped nuts, seeds, or coconut flakes. This will give the date balls a delicious and festive appearance.

Conclusion:

Date balls are a delicious and healthy snack that can be enjoyed by people of all ages. They are easy to make and can be customized to your own liking. With a little creativity, you can create date balls that are both nutritious and delicious. So next time you are looking for a healthy snack, give date balls a try. You won't be disappointed!
