I am a very picky eater and I love this cake! My husband and my kids (ages 7, 6, and 2) also love it. The entire batch is gone in less than one day and I don't mind making it a few times a week because it's so easy! It's healthy too so I made it for breakfast once :)

Time 45m

Yield 10 serving(s)

Number Of Ingredients 15

1/4 cup vegetable oil
2 eggs
1/3 cup blackstrap molasses
1 1/4 cups applesauce
1 1/2 cups brown rice flour (fine ground)
1/2 cup potato starch (not potato flour)
1/4 cup tapioca starch
1 teaspoon guar gum
1 cup sugar
1 teaspoon salt
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
cooking spray

Steps:

  • Preheat oven to 375 degrees.
  • Sift dry ingredients together in large mixing bowl, combining thoroughly.
  • Blend wet ingredients in a separate mixing bowl.
  • Add wet ingredients to dry ingredients slowly while beating with electric beater or large whisk. Beat thoroughly, until smooth.
  • Spray 9" round cake pan or 9x13" baking pan with baking spray. (For easier removal of cake from pan, place parchment paper on bottom of pan before spraying). Pour batter into cake pan.
  • Bake cake for 30-35 minutes or until a toothpick inserted in cake comes out nearly clean.
  • Remove cake from pan and place on cooling rack. Serve while warm.
  • Optionally, the cake can be frosted with vanilla frosting or dusted with powdered sugar before serving.

Tips for Making the Best Vegan Applesauce Cake:

  • Use ripe apples. This will give your cake the best flavor. If you don't have ripe apples, you can roast them in the oven before using them in the cake batter.
  • Don't overmix the batter. Overmixing can make the cake tough. Mix the batter just until the ingredients are combined.
  • Use a bundt pan or loaf pan. This will help the cake rise evenly.
  • Bake the cake until a toothpick inserted into the center comes out clean. This usually takes around 45 minutes to an hour. Make sure to check on the cake after 30-35 minutes so that the edges of the cake are not over-baked while the inside is still under-cooked.
  • Let the cake cool completely before frosting it. This will help the frosting set properly.

Conclusion:

This vegan applesauce cake is a delicious and easy-to-make dessert that is perfect for any occasion. It is moist, flavorful, and has a tender crumb. The maple glaze adds a touch of sweetness and richness. This cake is sure to be a hit with vegans and non-vegans alike.
