2 -3 teaspoons cocoa powder
2 tablespoons sugar
1 cup vanilla-flavored soymilk

Steps:

  • Pour the soy milk into a microwaveable mug and microwave on high for 1 minute.
  • Add the cocoa powder and sugar and stir well to combine.
  • Note: If using plain soy or rice milk, you can add 1/4 teaspoon vanilla extract.
  • I've also added almond extract with wonderful results.

  • Enjoy!

Tips:

  • Use high-quality cocoa powder for the best flavor. Look for cocoa powder that is labeled "natural" or "unsweetened."
  • If you don't have maple syrup, you can use another liquid sweetener, such as agave nectar or honey.
  • To make the hot cocoa even creamier, add a splash of your favorite dairy-free milk or cream.
  • For a more decadent hot cocoa, top it with whipped cream or marshmallows.
