Time 8h10m

Yield 4 serving(s)

Number Of Ingredients 12

2 tablespoons vegetable oil
1 1/2 cups chopped onions
4 cloves garlic, minced
1/2 teaspoon cumin
3 cups chopped kale or 1 package frozen chopped spinach
1 1/2 tablespoons curry powder
1 teaspoon ground ginger
1 teaspoon ground coriander
1 1/2 cups vegetable broth
3 cups cooked chickpeas
1 cup chopped tomato
1/4 teaspoon salt

Steps:

  • Combine all ingredients in your crock pot and let it cookon low 7 to 8 hours, or on high for 4 hours.

Tips:

  • Use fresh kale: Fresh kale is more flavorful and nutritious than kale that has been sitting around for a while. Look for kale that is deep green and has no yellowing or brown spots.
  • Rinse the kale thoroughly: Kale can be gritty, so it's important to rinse it thoroughly before using it. This will help to remove any dirt or debris.
  • Chop the kale finely: Finely chopped kale will cook more evenly and will be less likely to overcook.
  • Use a variety of spices: Curry powder is a great way to add flavor to this soup, but you can also use other spices like cumin, coriander, and turmeric.
  • Don't overcook the chickpeas: Chickpeas should be cooked until they are tender, but not mushy. Overcooked chickpeas will become tough and bland.
  • Serve with your favorite toppings: This soup is delicious served with a variety of toppings, such as yogurt, cilantro, and lemon wedges.

Conclusion:

Curried kale and chickpea soup is a healthy, flavorful, and easy-to-make soup that is perfect for a quick and easy meal. With its combination of kale, chickpeas, and curry powder, this soup is packed with nutrients and flavor. It's also a great way to use up leftover kale.
