one (12-ounce) container of plain whipped cream cheese
1 teaspoon dried chives
1/2 teaspoon dried dill
1/2 teaspoon dried parsley
1/2 teaspoon ground black pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
4 Flatout Wraps or tortillas
1/2 small red bell pepper, finely diced
1 cucumber, cut into long thin slices (seeds removed) (won't need all)
1 carrot, grated
1 small crown of broccoli, finely diced

Steps:

  • In a medium sized mixing bowl, mix together cream cheese, chives, dill, parsley, black pepper, onion powder, and garlic powder until well combined.
  • Spread one fourth of this mixture onto one of the Flatout ProteinUp CarbDown Wraps, in an even layer, all the way to the edges. Repeat on remaining 3 wraps. Place 1 cucumber strip on one end of each roll (the shorter of the two sides), and then sprinkle one fourth of the other vegetables evenly over cream cheese. Repeat for each roll.
  • Tightly roll up Flatouts with the filling on the inside. Wrap each roll individually in plastic wrap. Repeat until all 4 Flatouts are filled, rolled, and wrapped in plastic.
  • Place roll ups in fridge and chill for at least 1 hour before removing plastic wrap and slicing into pinwheels about 1/2-inch thick. Best served same day.

12 ounces gemelli, cavatappi or other spiral-shaped pasta
3 tablespoons unsalted butter
1 tablespoon all-purpose flour
1 teaspoon dry mustard
Pinch of cayenne pepper
1 (12-ounce) can evaporated milk
1/2 cup whole milk
3/4 cup shredded yellow sharp cheddar cheese
3/4 cup shredded monterey jack cheese
1/2 cup grated parmesan cheese
1/2 cup panko (Japanese breadcrumbs)
2 tablespoons chopped fresh parsley, chives and/or scallions

Steps:

  • Bring a pot of salted water to a boil; add the pasta and cook until al dente, about 8 minutes. Meanwhile, melt 1 tablespoon butter in a saucepan over medium heat. Add the flour, mustard and cayenne and stir with a wooden spoon to make a paste. Cook, stirring, until the paste puffs slightly, about 1 minute. Whisk in both milks and 1/2 teaspoon salt and simmer, whisking occasionally, until slightly thickened and creamy, 6 to 7 minutes. Add the cheddar and jack cheeses and all but 2 tablespoons of the parmesan and whisk until melted; keep warm. Combine the panko, herbs and/or scallions, 1 tablespoon butter and the remaining parmesan in a microwave-safe bowl and microwave until the butter melts, about 1 minute; toss. Drain the pasta, reserving about 1 cup cooking water, and return to the pot. Toss with the remaining 1 tablespoon butter, then stir in the cheese sauce, adding the reserved cooking water if needed. Season with salt and top with the breadcrumb mixture.

1 teaspoon extra virgin olive oil
1 medium carrot, coarsely grated
1 small sweet red pepper, seeded and finely chopped
1 small onion, very finely chopped
1 large garlic clove, minced
1 teaspoon curry powder (to taste)
1/3 cup chopped fresh coriander or 1/3 cup parsley
1 tablespoon lemon juice, freshly squeezed
1/2 teaspoon salt
8 ounces cream cheese, softened
4 large whole wheat tortillas

Steps:

  • In a large frying pan, heat oil.
  • Add carrot, red pepper, onion, garlic and curry powder and cook until softened, about 3 to 5 minutes.
  • Remove from heat.
  • Stir in coriander, lemon juice and salt; let cool slightly.

10 slices bread
10 leaves Baby Spinach or 10 leaves chard leaves (washed)
1 container flavoured cream cheese

Steps:

  • Take off crusts from white bread.
  • Take 2 slices, and lay one above (not on top) the other overlapping the edge by about half an inch.
  • Roll out well with a rolling pin to seal and flatten.
  • You should have a long piece now.
  • Spread with flavoured cream cheese right to the edges, and lay on a spinach/shard leaf Roll up tightly and leave in the fridge overnight.
  • Remove from fridge- Cut the roll into inch slices, push a pick through (optional) and lay decoratively on a platter.

Chill time for pastry isn't included in the prep time, since you can do this while making the rest of the recipe.

1 cup all purpose flour
1/2 cup butter, softened
1 (3 ounce) package cream cheese, softened
1/2 cup mushroom, diced
1/2 cup green pepper, diced
1/2 cup zucchini, diced
1 small onion, diced (no more than 1/4 cup)
1 small carrot, scraped and diced
1 teaspoon garlic, minced
2 tablespoons butter, melted
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup muenster cheese, may substitute mozzarella (4 oz)
3 eggs
1 cup milk
3 tablespoons onions, chopped
1 tablespoon butter

Steps:

  • Combine flour, 1/2 cup butter, and softened cream cheese in a medium bowl, stirring until blended. Shape into a ball. Cover and chill for 30 minutes. (You can do this while you chop veggies and saute them).
  • Saute mushrooms and next 5 ingredients in 2 tbsp melted butter in a large skillet until the vegetables are crisp-tender. Remove from heat; stir in paprika, salt, and pepper. Set aside.
  • Press the chilled pastry evenly on bottom and up sides of a 10 inch pie plate. Sprinkle muenster cheese over the pastry. Spoon reserved sauteed vegetables evenly over the cheese.
  • Combine the eggs and milk in a medium bowl. Beat with a wire whisk until blended. Pour the egg mixture over the vegetables.
  • Saute 3 tbsp chopped onion in 1 tbsp butter in a small skillet until tender. Drain, and sprinkle the onions over the quiche. Bake uncovered at 350 degrees for 40 to 45 minutes, or until set and lightly browned.
  • Let stand 5 minutes before serving.
