3 whole (6 split) chicken breasts, bone-in, skin-on
Olive oil
Kosher salt and freshly ground black pepper
1 1/2 cups good mayonnaise (recommended: Hellman's)
1/3 cup dry white wine
1/4 cup chutney (recommended: Major Grey's)
3 tablespoons curry powder
1 cup medium-diced celery (2 large stalks)
1/4 cup chopped scallions, white and green parts (2 scallions)
1/4 cup raisins
1 cup whole roasted, salted cashews

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken into large bite-size pieces.

2 baguettes, sliced into rounds
olive oil
1 pound cooked chicken, i used boneless skinless chicken breast
1 1/2 cups plain greek yogurt, plus more as needed
1/2 teaspoon onion powder
salt and pepper

Steps:

  • For the Crostini: Turn your oven on to broil and grab two baking sheets. Pour olive oil into a bowl and brush onto both sides of the sliced bread rounds using a pastry brush. Lay them in a single layer on the baking sheets. Place one pan on the center rack of your oven and broil until the edges of the bread is a beautiful light brown. This only takes 30 seconds in my oven but yours will be different. Stand by and watch for your ideal time. It may be more or less time for you. Turn the bread over and repeat with the other side. Continue until all the slices of bread are broiled. For the Chicken Salad: Chop cooked chicken into small pieces and stir together with 3/4 cup of Greek yogurt, onion powder and chopped rosemary, if you're using it in this recipe. Continue to stir until thoroughly mixed. Add cheese and stir in along with an additional 1/4 cup of plain Greek yogurt. If you're adding chopped apples, mix them in and also add another 1/2 cup of Greek yogurt. After the ingredients are completely mixed together, taste your chicken salad and add seasoning to fit your preference. Add more yogurt by the spoonful until the chicken salad fits your preference. Spoon the mixture onto the toasted slices of bread and top with dried parsley or chopped fresh parsley. Enjoy!

1 cup Waldorf chicken salad

2 tablespoons red grapes, halved
2 tablespoons celery, finely chopped

1 cup water
1 1/4 pounds boneless skinless chicken breast halves, no more than 3/4-inch thick
1/4 cup sliced almonds
1/2 cup nonfat plain yogurt
2 tablespoons mayonnaise
1 teaspoon curry powder
1 cup halved red grapes
1/4 cup chopped cilantro leaves
Salt and freshly ground black pepper
5 ounces mixed greens (about 5 cups lightly packed))
1 tablespoon extra-virgin olive oil
1 teaspoon lemon juice

1 lb cooked chicken breast, diced small
4 oz celery, small dice
8 oz (fl oz) mayonnaise
2 oz curried onion relish, use more if needed
salt and pepper , as needed
1 head bibb or boston lettuce, leaves rinsed & dried
4 oz butter, whipped
30 slice baguette, bias cut, 1/4 inch thick
8 oz slivered almonds, toasted

Steps:

  • 1. In a medium bowl, combine the mayonnaise and curried relish; mix well, adjusting with more relish as needed. In a large bowl, combine the chicken and celery, add enough dressing to make moist but NOT runny.
  • 2. Cut the lettuce leaves to fit the baguette slices.
  • 3. TO ASSEMBLE: Lightly spread butter on the baguette slices. Top with a piece of lettuce and 2 T. chicken salad. Garnish with a few almond slivers. Serve immediately.
