Yield 4

Number Of Ingredients 16

6 large chicken thighs (skinless and boneless)
2 tablespoon oil
1 large onion (finely diced)
2 green chilies (finely diced)
1 piece ginger (1-inch, finely grated)
3 cloves garlic (minced)
1/2 teaspoon chili powder
1 teaspoon turmeric
2 teaspoon garam masala
1 tablespoon brown sugar
1 tin tomatoes (chopped)
1 can coconut milk
1 cauliflower (broken into florets)
Salt to taste
Black pepper to taste
2 large handfuls spinach

Steps:

  • Gather the ingredients.
  • Start by cutting the chicken thighs into 2.5-centimeter ( 1 x 1-inch) sized chunks. Heat 1 tablespoon oil in a large frying pan and brown the chicken on all sides. Remove the chicken from the pan and keep to one side.
  • Add the remaining tablespoon of oil to the same pan, add the chopped onion and cook on medium heat until the onions are soft.
  • Add the green chile, ginger, and garlic and continue to cook for 1 minute, taking care not to burn. Then, add the chili powder, turmeric, garam masala , and sugar and cook for a further minute stirring constantly.
  • Pour in the tomatoes and coconut milk , stir well, then add the chicken and cauliflower. Simmer for 10 minutes until the cauliflower and chicken are cooked through. Add a little stock or water if the sauce gets too thick.
  • Check the seasoning, and add salt and/or pepper as required, then stir through the spinach until it just starts to wilt.
  • Serve the curry into warmed bowls with cooked rice, and/or naan bread or chapatis on the side.

CURRIED CAULIFLOWER AND CHICKPEA DUMP DINNER

Curried Cauliflower and Chickpea Dump Dinner image

Skip cooking a big pot of rice and throw the ingredients into a casserole dish instead for an easy dump-dinner meal. The basmati rice and chickpeas absorb all the delicious flavors of ginger, garlic, curry powder and coconut milk. Finish with a quick drizzle of yogurt along with fresh cilantro leaves and lime wedges for a simple and complete meal.

Time 1h5m

Yield 4 to 6 servings

Number Of Ingredients 14

Nonstick cooking spray
2 cups low-sodium vegetable broth
One 13.5-ounce can unsweetened coconut milk
4 cloves garlic, finely grated
1 tablespoon finely grated peeled fresh ginger (from a 1- to 2-inch piece)
1 serrano chile pepper, stemmed and finely chopped (remove seeds for less heat)
2 1/2 teaspoons curry powder, preferably Madras
Kosher salt
Two 15.5-ounce cans chickpeas, drained and rinsed
2 cups lightly packed baby spinach, roughly chopped
1 1/2 cups basmati rice
1/2 medium head cauliflower, cut into small florets (about 3 heaping cups)
1/2 small red onion, thinly sliced
Cilantro leaves, plain whole-milk yogurt and lime wedges, for serving

Steps:

  • Preheat the oven to 425 degrees F. Spray a 9-by-13-inch baking dish with nonstick spray.
  • Whisk the vegetable broth, coconut milk, garlic, ginger, serrano, curry powder and 2 teaspoons salt together in a medium bowl until combined. Add the chickpeas and spinach and stir to coat.
  • Spread the rice evenly in the bottom of the prepared dish. Pour in the coconut-milk mixture, distributing the chickpeas and spinach evenly over the rice. Scatter the cauliflower and onion over the top, making sure to go all the way to the edge of the pan (it's okay if the cauliflower is not completely submerged in liquid).
  • Cover tightly with foil and bake until the vegetables have softened but are still vibrant, about 25 minutes. Remove the foil and bake until the cauliflower is charred in spots and the rice is cooked through, 20 to 25 minutes more. Let sit for 5 minutes to allow the rice to absorb more of the moisture. Serve topped with cilantro, a drizzle of yogurt and lime wedges for squeezing.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients prepped and measured. This will help you stay organized and avoid scrambling during the cooking process.
  • Choose the Right Cauliflower: For the best results, choose a head of cauliflower that is firm and compact, with no signs of bruising or wilting. A large head of cauliflower will yield about 6 cups of florets.
  • Cook the Cauliflower Properly: To prevent the cauliflower from becoming mushy, cook it until it is tender but still has a slight bite to it. Overcooking will make the cauliflower limp and watery.
  • Use a Good Quality Curry Paste: The curry paste is the key to the flavor of this dish, so it's important to use a good quality paste. Look for a paste that is made with fresh ingredients and has a deep, rich flavor.
  • Adjust the Spice Level: The amount of curry paste you use will determine the spice level of the dish. If you like your food mild, start with a small amount of paste and increase it to taste. If you like it spicy, use more paste.
  • Serve with Rice or Naan: This dish is traditionally served with rice or naan, but it can also be served with other grains, such as quinoa or farro.

Conclusion:

This curried cauliflower and chicken dish is a delicious and easy-to-make weeknight meal. It's packed with flavor and is a great way to get your daily dose of vegetables. The cauliflower is tender and slightly crunchy, the chicken is moist and juicy, and the curry sauce is rich and creamy. Serve it with rice or naan for a complete meal.
