These muffins were very moist and not too sweet. I made a topping, using 3T of brown sugar and 2T of walnuts.

Steps:

  • In a mixing bowl, cream sugar and butter by hand. Add eggs, one at a time, beating well after each addition. Combine dry ingredients. Add to the creamed mixture alternately with applesauce. Mix just unitl combined. Fill greased or paper-lined muffin cups ⅔ full. Sprinkle some sugar on top. Bake at 350℉ (180℃) F for 20 to 25 minutes. Cool on a wire rack.

1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups applesauce
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup chopped walnuts, optional
Cinnamon-sugar, optional

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture. If desired, fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks. If desired, sprinkle with cinnamon-sugar.

2 cups whole wheat pastry flour
1 tablespoon baking powder
1 1/4 cups unsweetened applesauce
1/2 cup maple syrup
2 egg whites
1/2 cup sultana raisins or 1/2 cup nuts

Steps:

  • Combine dry ingredients and stir.
  • Combine wet ingredients and stir.
  • Stir wet into dry and blend just until combined and moist.
  • Fold in nuts Spray muffin tins, and fill each cup 3/4 full.
  • Bake 350 degrees for 17 minutes, or until tester comes away clean.
  • Remove to wire rack, let sit 6 minutes then, remove from tins, onto wire rack.

1 cup quick-cooking oats
2/3 cup sugar
1 tablespoon baking powder
1-1/2 teaspoons ground cinnamon
1/2 cup milk
1/3 cup butter, melted
1/4 cup maple syrup
1 large egg, lightly beaten. room temperature
2 cups chopped peeled apples
12 pecan halves
GLAZE:
1/3 cup confectioners' sugar
2 tablespoons maple syrup

  • In a large bowl, combine the flour, oats, sugar, baking powder and cinnamon. In a small bowl, mix milk, butter, syrup and egg; stir into dry ingredients just until moistened.
