1 (12-14-inch) English cucumber, cut into 1-inch chunks
2 fresh peaches, cut into 1-inch chunks
For the vinaigrette:
2 tablespoons avocado oil or olive oil
1 tablespoon white wine vinegar
2 teaspoons finely grated lime zest, from 1 lime
Zest of 1 lime
1 tablespoon honey
4 large fresh basil leaves, plus more for garnish
1/8 teaspoon kosher salt, or to taste
1/8 teaspoon freshly grated black pepper, or to taste

Steps:

zest & juice of 1 lemon
herb sea salt & black pepper to taste
1/2 tsp red pepper flakes
2 large seedless cucumbers, sliced
3 large california white peaches, chopped
1 small red onion, chopped
