Time 15m

Yield 4 serving(s)

Number Of Ingredients 5

1 medium cucumber
2 -3 green onions
8 ounces cream cheese
2 teaspoons sugar
1/4 teaspoon salt

Steps:

  • Peel the cucumber and cut in chunks. If it's got a lot of big seeds, scoop some out and discard. Put it in a food processor and chop fine. If it's really moist, or you didn't seed it, then you may want to squeeze off some of the excess juice.
  • Put the onion in the processor and chop. Add the rest of the ingredients. Process, scrape down the sides, and process again until smooth.
  • I like it best on soft, white bread. But it's also great on crackers.

  • Add your favorite herbs and spices: You can add a variety of herbs and spices to your cucumber sandwiches to give them extra flavor. Some popular options include dill, chives, parsley, salt, and pepper.
  • Let the sandwiches chill before serving: This will help the flavors to meld together and will also make the sandwiches easier to handle.
