1 English cucumber
1 teaspoon grated lime zest plus 1 cup fresh lime juice
3/4 to 1 cup chilled Simple Syrup, recipe follows
Handful of fresh mint leaves, plus more for garnish
2 tablespoons fresh dill fronds, plus more for garnish
4 shots cold vodka or gin
1 cup sugar

Steps:

  • Slice 4 very thin slices from the cucumber, then peel, seed and coarsely chop the rest. Combine the lime juice, chopped cucumber, some Simple Syrup and 2 cups cold water in a blender and blend until smooth. Pour into a pitcher and stir in the lime zest, mint and dill. Cover and refrigerate until very cold, at least 2 hours. Keep the cucumber slices covered and chilled.
  • Put some ice, a shot of vodka and some of the lime mixture in a cocktail shaker and shake for 10 seconds. Strain into a martini glass and garnish with a cucumber slice, some mint and dill. Repeat to make 3 more martinis.
  • Bring the sugar and 1 cup water to a boil in a small saucepan over medium high heat. When the sugar is completely dissolved, remove the saucepan from the heat and cool the syrup to room temperature. Refrigerate, covered, for up to 1 week.

1 (9 ounce) cucumbers, cut into 1/3 inch thick slices
6 slices cucumbers (thin slices, for garnish)
2 tablespoons dry vermouth

Steps:

  • Mix gin and thick cucumber slices in pitcher. Cover and chill overnight or up to 3 days.
  • Strain gin, discarding thick cucumber slices. Pour half of gin into cocktail shaker. Add 1 tablespoon vermouth, then fill shaker with ice. Shake vigorously; strain into three glasses. Repeat with remaining gin and vermouth.

1 teaspoon of sugar
1 teaspoon hot water
1 teaspoon fresh finly ground ginger
Martini:
1 3-inch cube skinned and seeded cucumber cut up in chunks
2 oz of gin or vodka
3 basil leaves torn (leave one whole)
1 tablespoon fresh lime juice

Steps:

  • In a small bowl mix sugar and the hot water together. Using a fine strainer, press the fresh ginger through the strainer over the bowl to release it's juices. In a shaker muddle 2 basil leaves (torn) with the cucumber until mashed well. Mix in the vodka or gin, the ginger simple syrup, fresh lime juice, and ice. Shake well and strain in chilled martini glass or over rocks. Garnish with a whole basil leaf and a thin slice of cucumber.
