Steps:

6 -8 lbs whole chickens (2 3-4 lb. chicken, cut into pieces)
12 garlic cloves, coarsely chopped
1 cup sour orange juice (or 1/2 cup orange juice mixed with 1/2 cup lime juice)
1 tablespoon salt
1 tablespoon white vinegar
1 teaspoon fresh ground pepper
1 teaspoon dried oregano
1 teaspoon ground cumin

Steps:

  • Place the chicken in a container large enough to hold all the pieces (I used an extra-large zip-loc bag).
  • Combine the garlic, sour orange juice, salt, vinegar, pepper, oregano and cumin in a small bowl. pour the marinade evenly over the chicken; cover chicken (or close bag and smush it around); refrigerate at least 1 hour or overnight.
  • Heat oven to 450°. Arrange chicken in one layer in a roasting pan; pour the marinade evenly over the top of the chicken.
  • Roast the chicken in the lower third of the oven, stirring during the last 10 minutes to coat with the sauce, until it is cooked through and the sauce begins to caramelize, 45 minutes to 1 hour.
  • Remove the chicken to a platter, spoon garlic sauce over the pieces.

1 tablespoon unsalted butter
1 tablespoons olive oil
1 medium onion, chopped

1 cup medium- or long-grain rice

Steps:

  • Preheat the oven to 375 degrees F. Pat the chicken dry and season with salt and pepper. Melt the butter with the oil in a large deep skillet, with a lid over medium-high heat. I'm fortunate to live in an area where I can buy fresh Cuban bread from Cuban bakeries. The loaf typically is about 36 inches long, which makes four big sandwiches. Cuban bread has a palmetto leaf placed on top center prior to baking to keep moisture in. The texture is crispy on the outside and very light on the inside.

1 ½ pounds chicken tenders
½ cup mojo marinade (such as Badia®), or as needed
1 tablespoon olive oil, or more as needed
8 thin slices sweet onion
1 (1 pound) loaf Cuban bread
¼ cup yellow mustard
20 dill pickle slices
4 slices Swiss cheese

Steps:

  • Place chicken tenders between 2 sheets of heavy plastic on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet until flattened out. Place chicken in a resealable plastic bag and add enough mojo marinade to cover the chicken. Marinate in the refrigerator for 2 hours, or up to overnight.
  • Heat olive oil in a large skillet over medium heat. Remove chicken tenders from the marinade, drain, and place in the skillet. Cook until lightly browned, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a plate.

4 chicken breasts
1/2 teaspoon salt
1/4 teaspoon pepper
3 1/2 cups hot water
1 medium garlic clove, minced
1 (10 ounce) package yellow rice
1/2 lb frozen peas, do not thaw
2 roasted red peppers, chopped

  • Heat oil in a large deep skillet over med-high heat. Add chicken and brown on both sides until golden and almost done. Remove to a plate, sprinkle with salt and pepper and keep warm.

1 medium yellow onion, chopped, divided
1 green bell pepper, chopped, divided

3 cups long grain rice
One 8-ounce can tomato sauce
3/4 cup olives stuffed with pimentos, drained
1 tablespoon chopped cilantro

Steps:

  • Heat the oil in a large, heavy bottom pot over medium-high heat. Season the chicken with salt and pepper, add to the pot, and brown in batches on both sides, 4 to 5 minutes per side. Remove the chicken to a plate. To the pot, add half the onions and half the green peppers (reserve remaining half for another use, such as Round 2 Recipe Black Bean and Pork Stew). Cook until softened, about 3 minutes, and then add the garlic and chile powder and season with salt and pepper. Stir in the rice and let it toast for 2 minutes. Add 4 cups water, tomato sauce, and olives and give it a stir. Put the chicken back into the pot. Steps:

  • Whisk first 11 ingredients in medium bowl for marinade. Place chicken in large resealable plastic bag; add marinade. Seal bag; turn several times to coat chicken. 1 teaspoon cumin seed
3 garlic cloves, chopped
1 fresh red chili pepper, chopped
1/4 teaspoon salt
2 tablespoons olive oil
5 teaspoons orange juice
5 teaspoons lemon juice
2 (8 ounce) boneless skinless chicken breast halves
2 tablespoons olive oil
1/2 cup orange juice
1 teaspoon lime zest
1 teaspoon honey
1 teaspoon sweet soy sauce
1/4 cup unsalted butter, cold and cut into pieces
1/2 cup diced mango
1/2 avocado
chopped fresh cilantro
chopped fresh parsley

Steps:

  • Toast the cumin seeds in a dry skillet over medium-high heat until fragrant, about 2 minutes.   • To serve, place chicken on the plate and sprinkle with mango and avocado. Drizzle with the sauce, and garnish with cilantro and parsley.

1/4 cup orange juice
2 tablespoons lemon juice
2 tablespoons lime juice
6 garlic cloves, peeled & minced
1 1/2 teaspoons salt
1/2 teaspoon black pepper
4 lbs skinless chicken pieces
1/4 cup flour
1 teaspoon cumin
1/3 cup olive oil
2 red potatoes (or amount to equal 1 cup, peeled and cubed)
2 cups chopped onions
1 cup green bell pepper, chopped
1 cup tomato sauce
1 cup white wine
1/2 cup pimento stuffed olive, left whole
1/2 cup raisins

Steps:

  • In a large non-metallic bowl, whisk together the marinade ingredients. Add the chicken pieces, cover and refrigerate a minimum of 4 hours, preferably overnight.
  • Remove chicken from marinade & blot on paper towels to dry. Reserve marinade.
  • Sprinkle chicken with cumin & dust lightly with flour.
  • In a large frying pan, heat oil until it starts to smoke. Quickly add the floured chicken, browning on both sides, just a minute or 2 on each side. (Do this in 2 batches to avoid overcrowding in pan). Remove chicken and set aside.
  • In the same pan, sauté the potato cubes until lightly browned on all sides.
  • Remove potatoes then sauté onion and pepper until limp.
  • Return chicken and potatoes to pan. Add reserved marinade, tomato sauce, wine, olives and raisins.
  • Cover and reduce heat to low and simmer until the chicken is done, 20-30 minutes. Don't overcook.
  • Serve the chicken pieces over white rice with plenty of sauce.

I have scoured the internet for different recipes, finally settling on this one that I have made my own. 2 bone-in chicken breast halves, cut in half widthwise
2 bone-in chicken thighs, skin removed
2 bone-in chicken legs, skin removed
kosher salt and freshly ground black pepper to taste
1 pinch crushed red pepper, or to taste
¼ cup olive oil, or more as needed
½ cup diced white onion
1 (1.41 ounce) package sazon seasoning
2 tablespoons sofrito
1 teaspoon minced garlic, or more to taste
1 teaspoon ground cumin
½ teaspoon kosher salt
½ teaspoon ground black pepper
½ teaspoon dried thyme
½ teaspoon adobo seasoning
¼ teaspoon ground turmeric
1 pinch cayenne pepper
2 cups long-grain white rice
1 (32 ounce) carton low-sodium chicken broth
1 (4 ounce) can diced green chiles
10 pimiento-stuffed green olives, drained and sliced

Steps:

  • Season both sides of the chicken pieces in salt, pepper, and crushed red pepper.
  • Heat olive oil in a wide nonstick pot over medium heat. Add chicken, and brown for 8 to 10 minutes per side, working in batches if necessary. Remove to a plate.

12 cloves Garlic (chopped)
1/2 cup Orange juice (fresh)

Steps:
