Yield Makes 4 to 6 servings

Number Of Ingredients 4

1 2-pound center-cut wild salmon fillet with skin (about 1 1/4 inches thick)
Salt
Freshly ground black pepper
1/4 cup crème fraîche*

Steps:

  • Preheat oven to 425°F. Line rimmed baking sheet with foil.
  • Place salmon, skin side down, on baking sheet; sprinkle with salt and pepper. Spread crème fraîche over salmon. Roast salmon until opaque in center, about 12 to 14 minutes. To test for doneness, cut small slit in thickest part of fillet; all but center of fillet should be opaque (salmon will continue to cook after fillet is removed from oven). Using spatula, transfer to platter.
  • *Sold at most supermarkets and at specialty foods stores.

Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and prevent any scrambling.
  • Choose the right salmon: Look for a salmon fillet that is firm and has a bright orange-pink color. Avoid any fish that is slimy or has a strong fishy smell.
  • Cook the salmon to perfection: The best way to cook salmon is to roast it in a hot oven. This will help to keep the fish moist and flaky. Cook the salmon until it is just cooked through, about 10-12 minutes per inch of thickness.
  • Make sure the crème fraîche is cold: Cold crème fraîche will help to keep the sauce from curdling.
  • Use fresh herbs: Fresh herbs, such as chives, dill, and parsley, will add a lot of flavor to the sauce.
  • Serve immediately: This dish is best served immediately after it is made. The salmon will start to dry out if it sits for too long.

Conclusion:

Crème fraîche roasted salmon is a delicious and elegant dish that is perfect for a special occasion. The salmon is cooked to perfection and the crème fraîche sauce is light and flavorful. This dish is sure to impress your guests. Here are some additional tips for making crème fraîche roasted salmon:

  • You can use any type of salmon for this recipe, but I recommend using a fatty fish like king salmon or sockeye salmon.
  • If you don't have crème fraîche, you can substitute sour cream or plain yogurt.
  • You can also add other vegetables to this dish, such as asparagus, broccoli, or Brussels sprouts.
  • Serve this dish with a side of roasted potatoes or rice.
