1 (8 ounce) can water chestnuts, drained & chopped
1 (4 ounce) jar diced pimentos, drained
8 green onions, thinly sliced
2 celery ribs, chopped

1/2 cup vinegar
1/2 cup sugar
1/4 cup vegetable oil
1 teaspoon salt

  • Pour over corn mixture; mix well.
  • Cover and chill for at least 3 hours.
  • Stir just before serving; serve with a slotted spoon.

Tips:

  • Select Fresh & Sweet Corn: Use fresh and sweet corn cobs for the best flavor and texture.
  • Don't Overcook the Corn: Avoid overcooking the corn, as it can become mushy. Cook until the kernels are tender but still have a slight crunch.
  • Use a Variety of Vegetables: Don't limit yourself to just corn. Try adding other vegetables like bell peppers, onions, tomatoes, and zucchini for a more colorful and flavorful medley.
  • Season Well: Don't be afraid to season the medley with salt, pepper, and your favorite herbs and spices. A simple combination of garlic powder, paprika, and chili powder works well.
  • Choose the Right Cooking Method: You can cook the medley in a variety of ways, including sautéing, roasting, or grilling. Choose the method that best suits your taste and the other dishes you are serving.

Conclusion:

A crunchy corn medley is a versatile and delicious dish that can be enjoyed as a side dish, salad, or even a main course. With its bright colors, sweet flavors, and satisfying crunch, it's a sure-fire hit at any gathering. So next time you're looking for a quick and easy dish to make, give this crunchy corn medley a try. You won't be disappointed!
