1 1/2 c evaporated milk
1/4 c melted butter
1/4 c chicken broth
3 eggs
3 c cooked brown rice
1 c parsley, chopped
2 box frozen chopped spinach (thawed, squeezed & drained)
1/2 c green onions
1 c parmesan cheese

Steps:

  • 1. Combine milk, butter, broth and eggs. Beat until frothy.
  • 2. Stir in remaining ingredients and pour into crockpot.
  • 3. Cook on high for 1 hour. Then turn to low and cook another 4-6 hours.

3 cups cooked rice
1 cup minced fresh parsley
1/2 cup shredded cheddar cheese, divided
1/3 cup chopped onion
1/4 cup chopped green pepper
1 garlic clove, minced
2 large eggs, lightly beaten
1 can (12 ounces) evaporated milk
1/2 cup canola oil
3 tablespoons lemon juice
1 tablespoon grated lemon zest
1 teaspoon salt
1/2 teaspoon seasoned salt
1/2 teaspoon pepper

Steps:

  • In a large bowl, combine the rice, parsley, 1/3 cup cheese, onion, green pepper and garlic. In another bowl, combine the eggs, milk, oil, lemon juice and zest, salt, seasoned salt and pepper. Stir into the rice mixture. , Transfer to a greased 2-qt. baking dish; sprinkle with remaining cheese. Bake, uncovered, at 350° for 40-45 minutes or until golden brown.

4 large boneless chicken breasts
1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup diced celery (optional)
1 cup Minute Rice

Steps:

  • Mix in crock pot the 3 cans of soup & rice. Place chicken on top of the mixture, then add diced celery (optional). Cook for 3 hrs on high or 4 hours on low. makes 4 servings.
