Time 4h25m

Number Of Ingredients 7

1/2 cup beef broth
4 small lamb shanks (about 3 lb. total weight)
1 teaspoon Diamond Crystal kosher salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon dried rosemary

Steps:

  • Add the broth to your slow cooker.
  • Season the lamb shanks with salt, pepper, garlic powder, cumin, and rosemary. Place the shanks in your slow cooker.
  • Cover and cook on HIGH for 4 hours or on LOW for 7 hours, until the lamb is very tender.
  • When the lamb shanks finish cooking, set the slow cooker to WARM.
  • Transfer the cooked lamb shanks to a plate. Strain the cooking liquids into a glass measuring cup, then return the lamb shanks to the slow cooker pan (carefully wipe it with warm moist paper towels if needed) and cover, to keep the meat warm while you thicken the gravy.
  • Use a spoon to skim the fat layer off the top of the cooking juices. Pour them into a medium saucepan. Heat over medium-high heat until almost boiling but not quite, then turn the heat down to medium and simmer, whisking occasionally, until liquids are reduced into a rich gravy, 10-15 minutes.
  • Transfer the lamb shanks to plates, spoon the gravy on top, and serve.

CROCK POT LAMB SHANKS

Crock Pot Lamb Shanks image

Modified version of a recipe I found on the 'net that I thought turned out great. Apart from a few small changes to seasoning the original recipe called for a cup of wine rather than beer, sometimes I feel with tomato that makes things a bit rich when slow-cooked and I thought the beer substitution worked well. If you don't want to use beer try a cup of beef stock instead of the stock powder / beer. Also whole garlic cooked this way doesn't taste strong at all, if you want it to have a strong garlic taste you'd need to crush some of it.

2 medium brown onions, sliced
12 garlic cloves, peeled
200 g mushrooms, coarsely sliced
1 cup beer
1 tablespoon Worcestershire sauce

400 g crushed tomatoes

LAMB OSSO BUCO SLOW-COOKED

Lamb Osso Buco Slow-Cooked image

There are two tricks to this recipe: browning the lamb shanks before they go into the slow cooker and reducing the sauce before serving. The result is an osso buco you'd be hard-pressed to distinguish from the labor-intensive classic.

Time 6h35m

Yield 4

Number Of Ingredients 10

½ cup all-purpose flour
2 ½ pounds lamb shanks
salt and freshly ground black pepper to taste
2 tablespoons unsalted butter
1 cup dry white wine
1 (14.5 ounce) can diced tomatoes
1 ½ cups chopped onion
¾ cup chicken broth
½ cup chopped celery
5 sprigs fresh thyme, leaves removed

Steps:

  • Put flour into a shallow wide bowl. Season lamb shanks all over with salt and pepper; dredge through the flour until coated, shaking off any excess flour.
  • Heat a large skillet over medium heat; add butter and heat until foaming. Cook lamb shanks in the hot butter until golden, about 5 minutes per side. Transfer lamb shanks to a slow cooker.
  • Pour wine into the skillet and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon; transfer to the slow cooker. Add tomatoes with their juice, onion, chicken broth, celery, and thyme leaves to slow cooker.
  • Cook on Low until lamb is very tender and almost falling off the bone, 6 to 8 hours. Transfer lamb shanks to a platter and cover with aluminum foil.
  • Transfer the sauce in the slow cooker to a large skillet; simmer over high heat until sauce is reduced to about 2 cups, 10 to 15 minutes. Season sauce with salt and pepper.

Tips:

  • Choose the right lamb shanks: Look for meaty shanks with plenty of marbling. This will ensure that your shanks are tender and flavorful.
  • Brown the lamb shanks before cooking: Browning the shanks in a hot skillet before adding them to the slow cooker will help develop their flavor and create a delicious crust.
  • Use a flavorful liquid: The liquid you use to cook the lamb shanks will infuse them with flavor. Choose a liquid that you enjoy the taste of, such as beef broth, chicken broth, or red wine.
  • Add vegetables and herbs: Vegetables and herbs will add flavor and depth to your dish. Common vegetables to add include carrots, celery, and onions. Popular herbs include rosemary, thyme, and garlic.
