Time 8h

Yield Serves 4

Number Of Ingredients 14

1 tbsp. canola oil
3 pounds bone-in beef chuck short ribs
2 medium onions, peeled and quartered
2 medium carrots, cut into large chunks
2 medium parsnips, cut into large chunks
2 medium turnips, peeled and cut into large chunks
4 sprigs fresh rosemary
4 sprigs fresh thyme
4 sprigs fresh parsley, stems and leaves separated
1 tbsp. Worcestershire sauce
1 tbsp. spicy brown mustard
1 (12-ounce) dark stout beer, such as Guinness
Kosher salt
Black pepper

Steps:

  • In a large skillet over medium-high heat, add the oil. Season the short ribs with salt and pepper. When the oil is hot, brown the short ribs, in batches, until they are browned on all sides, about 3-4 minutes per side.
  • While the short ribs are browning, place a layer of onion and carrot pieces into the bottom of a slow cooker and season them with salt and pepper. Place the browned meat on top. Add the remaining onions and carrots along with the parsnips and turnips. Tie together the rosemary and thyme with the parsley stems and add them to the pot along with the Worcestershire and mustard. Pour over the stout and add enough water to almost cover the contents. Cover and cook on low for 6-8 hours, or until the meat is very tender.
  • To serve, carefully remove the meat and vegetables from the slow cooker. Strain the juices. Serve the ribs with the juice and garnish with chopped parsley leaves.

The meat on the bone is so rich in flavor, and because short ribs are fairly fatty, they are always moist.

Time 8h30m

Yield 6-8 serving(s)

Number Of Ingredients 17

1 (14 g) package porcini mushrooms or 1 (14 g) package shiitake mushrooms, dried
3 lbs beef simmering beef short ribs
1 tablespoon vegetable oil
2 cups button mushrooms
2 onions, chopped
3 garlic cloves, minced
2 carrots, diced
1 tablespoon crumbled dried rosemary
3/4 teaspoon salt
1/2 teaspoon pepper
1 (28 ounce) can diced tomatoes, 796 ml
3/4 cup red wine (or 3/4 cup beef stock and 1 tbsp. wine vinegar)
2 tablespoons tomato paste
1/4 cup all-purpose flour
2 tablespoons balsamic vinegar or 2 tablespoons wine vinegar
1/3 cup water
2 tablespoons chopped fresh parsley

Steps:

  • In measuring cup, pour boiling water over porcini mushrooms; let stand for 20 minutes. Strain, reserving liquid. I like to strain the liquid through a paper towel lined sieve, because of the sand in the liquid from the mushrooms. Set mushrooms and liquid aside.
  • Cut ribs into 2 bone pieces. Broil, turning once, until browned, 5 minutes. Place in slow cooker.
  • In skillet, heat oil over medium high heat; sauté porcini and button mushrooms, onions, garlic, carrots, rosemary, salt and pepper until softened, 5 minutes. Scrape into slow cooker. Add tomatoes.
  • Whisk together soaking liquid, wine and tomato paste; pour into slow cooker. Cover and cook on low for 7 to 8 hours or until meat is tender. Skim off fat.
  • In small bowl, whisk together flour, vinegar and 1/3 cup water; whisk into slow cooker. Cover and cook on high for 15 minutes or until thickened. Stir in parsley. Makes 6 to 8 servings.
  • VARIATION: Stove Top Short Ribs in Red Wine Sauce: Follow recipe as directed, using Dutch oven instead of slow cooker; cover and simmer over medium low heat until ribs are tender, about 2 hours. Skim of fat. Reduce flour to 2 tablespoons and water to ¼ cup; whisk into pan and simmer until thickened, about 5 minutes. Stir in parsley.

Tips:

  • Choosing the Right Short Ribs: Opt for short ribs that are well-marbled with fat for maximum flavor and tenderness.
  • Searing for Rich Flavor: Before braising, sear the short ribs in a hot skillet to develop a deep, caramelized crust that enhances the overall taste.
  • Mirepoix for Aromatic Base: Use a combination of diced carrots, celery, and onions (mirepoix) as the aromatic base for your braising liquid. This trio adds sweetness, depth, and complexity to the sauce.
  • Red Wine Selection: Choose a full-bodied red wine with bold flavors to complement the richness of the short ribs. Opt for a wine that you would enjoy drinking on its own.
  • Braising Liquid: In addition to red wine, incorporate beef broth, tomatoes, garlic, herbs, and spices to create a flavorful braising liquid that infuses the short ribs with incredible taste.
  • Low and Slow Cooking: Allow ample time for braising. The low and slow cooking process helps break down the connective tissue in the short ribs, resulting in fall-off-the-bone tenderness.
  • Cooking Options: You can braise the short ribs either in a slow cooker or on the stovetop. Both methods yield tender and flavorful results.
  • Serving Suggestions: Serve the braised short ribs over mashed potatoes, polenta, or egg noodles to soak up the delicious sauce. Accompany with roasted vegetables for a complete and satisfying meal.

Conclusion:

With careful preparation and attention to detail, you can create incredibly delicious and tender braised short ribs that will impress your taste buds and satisfy your cravings. Whether you choose to braise them in a slow cooker or on the stovetop, the result will be a rich and flavorful dish that is perfect for special occasions or everyday meals. Don't forget to experiment with different red wines and herbs to find the combination that best suits your palate. Remember, the key to success lies in the quality of ingredients and the patience to allow the short ribs to braise until they reach fall-off-the-bone tenderness. So, gather your ingredients, fire up your slow cooker or stovetop, and embark on a culinary journey that will leave you and your loved ones savoring every bite of these delectable braised short ribs.
