I'm always up for a pot of beans during cold winter days. This is just another flavorful recipe I put together with what I had. Delicious!

1 large onion, chopped
1 Tbsp olive oil
6 clove garlic, chopped
2 lb dry northern beans
4 c water
4 c chicken broth or stock
1 tsp chicken bouillon paste optional, it adds flavor
1 c baby carrots
Salt and pepper to taste
1 Tbsp herbes de provence
1 meaty ham bone or a couple meaty ham hocks

Steps:

  • 1. Place oil in bottom of slow cooker, add onion, garlic and carrots. Next add ham bone, beans, seasonings, broth and water. Stir in bouillon.
  • 2. Cook on high for 6 hours adding more broth or water as beans absorb. Cook until beans are desired tenderness.

8 slices bacon, coarsely chopped
5 cups chicken broth
2 ½ pounds fresh green beans, trimmed and cut into 1 1/2-inch pieces
1 large red onion, sliced on the diagonal
3 tablespoons white vinegar
3 tablespoons white sugar
2 tablespoons minced garlic
1 tablespoon ground black pepper, or more to taste
1 tablespoon seasoned salt (such as LAWRY'S®), or more to taste

Steps:

  • Place bacon in a small pan and cook over medium-high heat, turning occasionally, until almost crisp but not fully cooked, 3 to 5 minutes.
  • Place chicken broth, green beans, onion, vinegar, sugar, garlic, black pepper, and seasoned salt in a slow cooker. Add bacon and stir to incorporate fully. Cook on High for 1 hour.
  • Turn slow cooker down to Low and cook for 7 hours more. Taste and adjust seasoning. Serve in a large bowl with some of the broth.

1 lb dried pinto bean
1 teaspoon baking soda
1 lb bacon or 1 lb salt pork, diced
2 (12 ounce) bags frozen chopped onions or 3 large onions, diced
3 garlic cloves, minced fine
4 green bell peppers, diced
2 bay leaves
2 cups diced ham or 2 small ham hocks
1 tablespoon kosher salt
2 tablespoons dried oregano
2 tablespoons ground cumin
1/2 tablespoon ground black pepper
1/2 cup packed dark brown sugar
1/2 tablespoon Worcestershire sauce
1 tablespoon dried thyme
3 large tomatoes, peeled seeded and diced or 1 (28 ounce) can diced tomatoes

Steps:

  • Pick over beans, removing any pebbles, and any broken or discolored beans. Cover with plenty of cold water and let soak at room temperature over night.
  • Drain beans and add to a large pot with baking soda and enough water to cover by 2". Bring to a boil, reduce heat and simmer 10 minutes.
  • Saute bacon in a large skillet until quite crispy. Drain with slotted spoon and transfer to crockpot. Add onion, garlic and bell peppers to bacon fat remaining in skillet and saute until onion is translucent and vegetables are soft; add to crockpot. Drain beans well and add to crockpot with bay leaves and ham hocks. Stir together remaining ingredients and add to pot. Add enough water to cover the beans (about 2-3 cups, depending on your pot).
  • Cover and cook on low 8 to 10 hours. Add additional water if needed, but avoid making the sauce too thin. Serve hot. Be sure to remove and discard bay leaves and ham bones before serving.

1/2 cup uncooked brown rice
1/2 cup onion, finely chopped

1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 garlic cloves, chopped
8 cups fresh spinach or 8 cups kale leaves, coarsely chopped
asiago cheese, finely shredded

Steps:

  • In a 3 1/2- or 4-quart slow cooker, combine vegetable broth, tomato puree, beans, rice, onion, basil, oregano, salt, pepper and garlic.
