CROCK-POT BEEF ROAST

Crock-Pot Beef Roast image

I've put together a few different recipes to come up with something our family likes. Hope you enjoy it too! *I usually cut my potatoes into eighths unless they are small potatoes. *Using the crockpot on a low setting makes the meat so much more tender. *I have a 6 quart crockpot, so I can fit a lot into it.

Time 8h20m

Yield 6-8 serving(s)

Number Of Ingredients 11

6 potatoes, peeled and cut into large chunks
5 carrots, peeled and cut into 2-inch slices
1 onion, quartered
2 -3 lbs boneless chuck roast
1/2 cup water or 1/2 cup beef broth
1 tablespoon chives, chopped
2 tablespoons parsley, chopped
1/8 teaspoon pepper
1 (1 ounce) package onion soup mix
2 tablespoons Worcestershire sauce
1 (10 3/4 ounce) can cream of mushroom soup

Steps:

  • Put potatoes, carrots and onion on bottom of crockpot.
  • Place the roast on top, fat side up.
  • Pour in water or beef broth.
  • Sprinkle chives, parsley, pepper and Onion Soup mix over the meat.
  • Pour Worcestershire sauce and mushroom soup over meat.

CROCK POT (SLOW COOKER) FRENCH DIP ROAST BEEF SANDWICHES

Crock Pot (Slow Cooker) French Dip Roast Beef Sandwiches image

I have another tried and true French Dip recipe and also use another great one here on 'zaar, but when I went to make it the other day, I was lacking all of the ingredients to make either...so the following was born. Turns out everyone liked it better than either of my previous ones, so I figured I better post it for posterity!

  • Sprinkle with onion soup mix and then pour onion soup and beer over it.

  • Our favorite way to serve: open rolls and place a slice of provolone on one side of each; place under broiler until cheese is almost melted. Spoon beef on top with slotted spoon and serve sandwich with a side cup of au jus.

FRENCH DIP ROAST BEEF FOR THE CROCK POT

French Dip Roast Beef for the Crock Pot image

This is one of the best recipes I've come up with for beef roast. The cheapest cuts come out tasting like you slaved over a stove all day long. You can add potatoes and carrots to the recipe if you like, or shred it and serve it as a French Dip sandwich with the au jus juice from the crock pot on the side. If you are watching your sodium, use the lite soy sauce and it will taste just as delicious.

Categories     Meat

Time 8h30m

Yield 1 beef roast, 12 serving(s)

Number Of Ingredients 12

1 (6 lb) boneless beef rump roast, trimmed of fat

  • Into bottom of a 6-quart crock pot or slow cooker, place the beef rump roast.
  • Pour in the (undiluted) can of beef broth and the dill pickle juice.
  • Over the top of the roast evenly spread the mustard and finely chopped dill pickles (or dill pickle relish). Dot with the whole bay leaves and sprinkle generously with salt and pepper. Top roast with the sauteed onions and bacon.
  • Cover and cook on high for 6-8 hours, or until tender. Remove meat, and strain juices to make gravy (see to make gravy below).

  • Make a slurry in a 2 cup glass measuring cup using a fork to whisk together 1 cup cold water and 1/2 cup flour, until smooth. Pour the slurry all at once into the pan of juices.
  • Using a wire whisk and whisking all the while, bring the gravy mixture to a boil over medium-high; then reduce to a simmer and continue to cook and whisk another 5 minutes (gravy wil thcken more as it cools).
  • P.S. Good sides are green beans (Gruene bohnen), sweet and sour red cabbage (Rotkohl), and boiled or mashed potatoes topped with fresh snipped parsley. Guten appetit!

EASY CROCK POT BEEF ROAST

Easy Crock Pot Beef Roast image

This is going to be one of the easiest Beef Roast you've ever made. This roast is so tender and delicious, yet so simple to make. The flavor of the pepper rings and juice goes right through the roast, and it is so moist, with a mild taste. I received this recipe from a close friend who works in the meat dept. at a local grocery store. When customers ask for a different way to make a roast, they suggest this. The leftovers make the best sandwiches. Be sure you use the Mild pepper rings, and not the Hot. I wouldn't advise adding potatoes or carrots to this recipe. This is one of my husbands favorite, I hope you like it too.

TEX-MEX BEEF POT ROAST (CROCK POT)

Tex-Mex Beef Pot Roast (Crock Pot) image

This was a wonderful creation I made today. I could not find a Mexican style pot roast that included the ingredients I had on hand, so I threw together what I hoped were spices that blended well. Boy, did they ever! I served this with vegetarian refried beans sprinkled with a shredded Mexican 4-cheese blend. I hope you enjoy this as much as I did.

CROCK POT ROAST BEAST (BEEF - CAN USE MOOSE OR OTHER WILD GAME)

Crock Pot Roast Beast (Beef - Can Use Moose or Other Wild Game) image

Just something I threw together one day when we were going to be gone all day and I didn't want to do the same old (but yummy) crock pot roast. The "drippings" from this dish make a very flavorful gravy to serve with the roast and mashed potatoes. I think this would be good with a few sliced carrots and celery tossed in also. **This can also be used with moose and other wild game** This is a nice way to cook wild game that tends to be a bit dry. You can add water if it is too salty for your tastes.

RED WINE AND MUSHROOM CROCK POT ROAST BEEF

Red Wine and Mushroom Crock Pot Roast Beef image

This is a recipe I created on my own. It is so simple, just prepare the ingredients, throw them in the crock pot before work and when you come home you will have the most tender roast beef you have ever eaten!

Provided by fuzzy_kitten

Categories     Roast Beef

Time 8h20m

Yield 4 serving(s)

Number Of Ingredients 11

2 -3 lbs chuck arm pot roast or 2 -3 lbs blade roast
3 slices thick cut bacon, diced
8 ounces portabella mushrooms, sliced
2 cups dry red wine (Cab Sauv. or Merlot)
1 large onion, quartered then halved
1 (14 1/2 ounce) can beef broth
2 teaspoons dried thyme
salt, to taste
pepper, to taste
1/2 cup flour
1 cup cold water

Steps:

  • Place roast in crock pot and season liberally with salt and pepper.
  • Cook bacon in skillet until crispy.
  • Add mushrooms, wine, onion, broth, and thyme to the crock pot with the roast while you are waiting for the bacon to cook.
  • When the bacon is done, add it to the crock pot and give it a good stir to mix all of the flavors together.
  • Set your crock pot at low for 7-8hrs.
  • I recommend at least 8 hours because your roast will become soo tender it will literally fall apart as you try to remove it from the dish.
  • If your roast seems tough yet, just give it a little more time, it will only get more tender the longer it cooks.
  • Remove the roast and transfer the remaining sauce to a sauce pan.
  • Mix 1/2 cup of flour with 1 cup of cold water.
  • Gradually add flour mixture to the remaining sauce while whisking over med high heat until sauce thickens.
  • Serve gravy over mashed potatoes.

BALSAMIC ROAST BEEF IN THE CROCK-POT

Balsamic Roast Beef in the Crock-pot image

I tried a new recipe that my friend from New Jersey sent me. She said it was so different than the regular pot roast with the balsamic vinegar. We tried it and liked it enough for me to add to my recipes. That is the test in my kitchen. If it is only so, so I don't even bother adding to my own cookbook let alone share with...

Provided by Marsha Gardner

Categories     Roasts

Time 5h30m

Number Of Ingredients 16

1 c beef stock
1 tsp freshly ground black pepper
1 tsp onion powder
1 tsp garlic powder with parsley
3 1/2 lb eye of the round
2 Tbsp all purpose flour
2 Tbsp olive oil, extra virgin
3 medium onions, peeled and thickly sliced
4 clove garlic
1/4 c water for deglazing
1/4 c balsamic vinegar
3/4 tsp thyme, dried
1 c beef stock
3 Tbsp flour for slurry
1/2 oz shitake mushrooms, dried
3/4 c boiling water for re-hydrating mushrooms

Steps:

  • 1. In medium saucepan pour beef stock, bring to boil, keep boiling until reduced to about 1/2 cup guessing at 3 minutes as it really depends upon pan size and burner temperature. Let cool. Meanwhile, mix together black pepper, onion powder, and garlic powder; rub onto roast.
  • 2. Sprinkle flour onto both sides of meat and pat into meat Heat olive oil in high sided pan at moderate temperature, sear meat all over for about 10 minutes-take your time as this is when you get luscious drippings. While meat is browning, line crock-pot, add onions and garlic to crock-pot.
  • 3. Set meat on top of onions and then deglaze pan (about 1 minute) that meat was in with 1/4 cup water, scrap up those yummy drippings, reserve in pan for next step, Pour reduced beef stock, balsamic vinegar, and rosemary into deglazed liquid; pour over meat. Cover crock-pot, cook on low. I check the meat with meat thermometer about 30 minutes before I think it will be done. Crock-pots vary. For 3 1/2 pound roast, it will be done in about 5 hours, and for 3 1/4 pound roast it will take about 4 hours and 50 minutes. After removing meat, cover with foil and let rest while making gravy.
  • 4. About 15 minutes before removing roast, soak mushrooms in boiling water for 30 minutes, drain and discard liquid. Scoop out and reserve onions from crockpot. Take liquid from crockpot, and pour into large skillet, add the other cup beef stock, bring to boil, boil about 5 minutes, make slurry of flour and cold water, reduce burner to moderate temperature, stir slurry into hot liquid, and stir until lumps are out, strain if needed.
  • 5. Put reserved onions and mushrooms into gravy. Slice meat and add to gravy.

Tips:

  • Choose the right cut of beef: Chuck roast, rump roast, and sirloin tip roast are all good choices for a crock pot roast beef.
  • Brown the beef before cooking: Browning the beef in a skillet over medium-high heat before adding it to the crock pot will help to develop flavor and create a more tender roast.
  • Use a flavorful liquid: Beef broth, red wine, or even beer can be used to add flavor to the roast beef. You can also add a variety of spices, herbs, and vegetables to the liquid.
  • Cook the roast on low for 8-10 hours: This will allow the roast to become tender and fall apart easily.
