SPICY CROCK POT QUESO (CHEESE DIP)

Spicy Crock Pot Queso (Cheese Dip) image

A rich, spicy cheese dip that is a must for parties and get-togethers. It also works well as a sauce. You can make it as mild or as spicy as you like, depending upon the type of sausage and/or Rotel you use.

Time 50m

Yield 1 bowl of queso, 8 serving(s)

Number Of Ingredients 3

1 lb sausage (chorizo works well, too)
32 ounces Velveeta cheese, cut into cubes
2 (28 ounce) cans Rotel Tomatoes (for added spice use the "Extra Hot" flavor)

Steps:

  • Crumble sausage and brown in skillet.
  • Place Velveeta and Rotel into a crock pot and heat on high.
  • Once sausage is browned, add it to the crock pot.
  • Continue heating on high, stirring occasionally, until cheese has melted.
  • Turn heat down to low, get out the tortilla chips and beer, and enjoy the ballgame.
  • This recipe works as a sauce as well.
  • If you are having a large get-together, I recommend doubling the recipe, it's usually the life of the snack buffet.

CROCK POT QUESO DIP

Crock Pot Queso Dip image

This is a twist on the traditional Rotel and Velveeta Queso Dip. It is a not so hot, creamier mash-up of what loaded nachos taste like. Serve it with Frito's Corn Chips or tortilla chips.

Categories     Dips

Time 1h20m

Number Of Ingredients 5

1 pkg velveeta cheese-32oz
1 pkg cream cheese-8oz
1 can(s) rotel
1 can(s) cream of mushroom soup
1 lb lean ground beef

Steps:

  • 1. Brown ground beef; drain. Cut Velveeta and cream cheese into cubes. Place cheeses into crock pot. Add Rotel and cream of mushroom soup; stir. Cook on LOW 30 minutes. Add browned ground beef; stir. Cook 30 minutes longer. Serve with Frito's corn chip or tortilla chips. Refrigerate remainder.

Tips:

  • Choose the right cheese: Use a blend of cheeses that melt well, such as cheddar, Monterey Jack, and queso Oaxaca. Avoid using hard cheeses like Parmesan or Romano, as they won't melt smoothly.
  • Use fresh ingredients: Freshly grated cheese, diced tomatoes, and chopped onions will give your queso dip the best flavor. Avoid using pre-packaged or canned ingredients, as they can be bland and watery.
  • Don't overcook the dip: Queso dip is best when it is melted and smooth, but not overcooked. Overcooked dip can become thick and rubbery. Cook the dip on low heat for 1-2 hours, or until it is melted and bubbly.
  • Add your favorite toppings: Once the dip is cooked, you can add your favorite toppings. Some popular options include diced tomatoes, chopped onions, cooked ground beef, shredded chicken, and crumbled bacon.
  • Serve immediately: Queso dip is best served immediately after it is made. It can be kept warm in a slow cooker for up to 2 hours, but it will start to lose its flavor and texture after that.

Conclusion:

Crock-pot queso dip is an easy and delicious appetizer that is perfect for parties or potlucks. It is also a great way to use up leftover cheese. With just a few simple ingredients, you can make a creamy, cheesy dip that everyone will love. So next time you're looking for a quick and easy appetizer, give crock-pot queso dip a try. You won't be disappointed!
