5 pounds medium russet potatoes, peeled and cut into 1-inch chunks
12 tablespoons (1 1/2 sticks) unsalted butter, cut into 1/2-inch cubes

1 cup sour cream
1 1/2 to 2 cups milk, warm
2 tablespoons sliced chives
