LUCY'S MAC AND CORN

Lucy's Mac and Corn image

This recipe came from my high school cafeteria's cook, Lucy. It's my favorite school lunch dish! (Casey's mom has found that 1/2 stick of margarine and reduced-fat Velveeta results in an equal taste with less fat.)

Yield 7

Number Of Ingredients 5

1 (14.75 ounce) can creamed corn
1 (11.25 ounce) can corn
1 cup macaroni
½ cup butter
8 ounces cubed processed cheese food

Steps:

  • Mix together creamed corn, whole kernel corn, and uncooked macaroni. Slice the butter or margarine, and mix into the corn mixture along with the cheese. Place in a buttered casserole dish. Cover.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Uncover, stir, and bake uncovered for 30 more minutes.

Tips:

  • Use a variety of cheeses: You can use different types of cheese to create a rich and flavorful casserole. Some good options include sharp cheddar, mozzarella, Parmesan, and Monterey Jack. You can adjust the type of cheese or its quantities based on your preference and what you have on hand.
  • Use good quality canned corn: Canned corn is more readily available all year round and can be easier to use than fresh corn. When selecting canned corn, choose brands that are non-GMO and BPA-free, and check the expiration date to ensure freshness.
  • Don't overcook the macaroni: Macaroni should be cooked al dente, or slightly firm to the bite. Overcooked macaroni will become mushy and ruin the texture of the casserole.
  • Add some heat: If you like spicy food, you can add some diced jalapeños, hot sauce, or chili powder to the casserole. This will give it a nice kick of flavor.
  • Top with breadcrumbs: Before baking, sprinkle some breadcrumbs on top of the casserole. This will add a crispy texture and help to brown the top.

Conclusion:

This crock-pot macaroni corn casserole is a delicious and easy-to-make dish that is perfect for a crowd. It is cheesy, creamy, and packed with corn flavor. You can customize it to your liking by adding different cheeses, vegetables, or spices. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. This casserole is a great option for a weeknight meal or a potluck.
